How do I cook the kebabs?

If you want to save time (and also efforts), get some cubed boneless chicken from your butcher. The even the pieces are, greater would be chances of even cooking. This would in turn give you juicy chicken kebab skewers!

So, to begin with marinate the chicken pieces in a simple marinade so that the meat becomes tender and imbibes some of the flavour as well. I used a basic Indian marinade of Yogurt, Garlic Powder, Salt, Red Chili Powder and Lemon juice. One thing I love about chicken is they are so versatile and can be prepped last minute as well. So, keep aside the marinated chicken pieces for 30 minutes or so and then you can start grilling them.

If you are prepping ahead for your party, then you can marinate the chicken the night ahead and refrigerate them in a bowl covered with cling wrap. This way you can actually take some of the load off while you are busy entertaining as the host!

How to prepare the wooden skewers for grilling?

One of the most frequent question about the wooden skewers is that, if the wooden skewers can be put in the oven? Absolutely yes. Remember we are cooking chicken here, and as it is chicken takes very little time to cook. So, essentially the wooden skewers would be in the oven for 4-5 minutes only.

If you are using grill pan, then also these wooden skewers are perfectly safe to be used.

The only caution that has to be kept in mind is to soak the wooden skewers in water for a minimum of 30 minutes before using. This cools the skewers, which are often the Bamboo Skewers, and thus prevents them from catching fire in the oven. 

Even if you are using grill pans for making these chicken kebabs, do soak the skewers beforehand.

In order to prepare the skewers, take a large and flat bottomed pan which would accommodate the skewers and allow them to immerse in the water completely. Now, place the wooden bamboo skewers in it and pour potable water so that they can soak in it for a while. Leave this aside for 30 minutes or so.

Once they have soaked completely, take them out of the water and thread the marinated chicken pieces. Keep them aside when done. Put them on the grill while they are still wet, otherwise it will defeat the whole purpose of soaking.

Grilling chicken skewers in oven is also completely safe. It is a common apprehension if wooden utensils can be used in a microwave oven. Apart from metal based utensils, rest everything else can be used in a microwave oven for cooking or heating purposes.

How to serve Chicken Skewers Kebabs?

As you can see, I served the Chicken Skewer Kebabs with two choice of dips and a simple salad of sliced onion and tomato. The dips include a mint-coriander chutney which is made with salt, dried mango powder and green chilies. The second one is the same chutney added to some yogurt for a milder version of the same.

Also, I made some of it extra which went into making of a healthy-ish version of popular Kolkata street food, Egg-Chicken Roll.  Healthy because this chicken filling is completely oil-free, has very little spice in it yet tastes perfectly amazing. Ingredients
  • 250 gms Boneless Chicken Pieces Cut in 2 inch cubes
  • 2 tbsp Yogurt
  • 1 tsp Garlic Powder
  • Salt to Taste
  • 1 tsp Red Chili Powder
  • Few drops of lemon juice
Instructions
  1. Mix all the ingredients together and let the chicken marinate for 30 minutes or so.

  2. Meanwhile, soak the Bamboo skewers in water so that they do not catch fire in the oven/grill pan

  3. After 30 minutes or so, thread the chicken pieces onto the Bamboo skewers and place them on a oven safe baking tray. Cook them for 5 minutes at 900W power in the Microwave Mode.

    If you are using Grill Pan on a stove top, then place them in the hot pan and turn them around till they are cooked on all sides.

  4. Once done, take them out on your platter, sprinkle some rock salt and few drops of Lemon juice. Serve with a side of Salad and dips.
