How to buy & prepare Jackfruit for this kebab recipe?

All you have to do is ask your grocer to prise open the jackfruit for you and take out the jackfruit arils and the seeds. In the case of the tender ones, apart from the stem and the outer shell, the rest of it is edible. Ask the seller to cut it in cubes for you, if he can.

Once you are back home and ready to handle the jackfruit, oil your palms first. Now, clean the jackfruit pieces and pressure cook them in water with some salt for 5-6 minutes on high flame. Once they have cooled down, discard the water and keep the jackfruit pieces in a sieve to discard any leftover water. Keep it like this for 30 minutes.

Vegetable Kebab recipe with Jackfruit

I found this recipe in a cookbook called Just Kebabs – Celebration of 365 Kebabs & One for a Leap Year by Chef Devinder Kumar of Le Meridian, New Delhi. I am attaching an affiliate link to Amazon here if in case you wish to purchase.

This recipe also uses Green Bananas and Potatoes along with the Jackfruit to give it some body and starchy component. As a binder, I have used a slice of bread instead of breadcrumbs as originally called for in the recipe. In case you wish to make some gluten-free kebabs, you can easily replace the breadcrumbs with some Cornflour/Besan or Gram Flour/Arrowroot Powder.

Ingredients
  • 2 cups pre-boiled Kathal or Jackfruit approx 200 gms
  • 1 cup pre-boiled Kachhe Kele or Green Banana 1 no.
  • 1 cup pre-boiled Potatoes 1 no.
  • 1 bread- toasted & grinded
  • 1 inch Ginger
  • 2 Green Chilies
  • 1/2 cup Coriander leaves
  • Salt
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Garam Masala Powder
  • 1/2 tsp Red Chili Powder
  • 1 tsp Red Chili flakes
Instructions
  1. Mix all the ingredients and make a smooth dough out of it

  2. Divide it into 8 equal parts. Now roll each of them between your palms and flatten them into round discs

  3. Heat any refined oil in a pan and fry the kebabs in 2 batches

  4. Serve hot with chutneys.
