Thyme & Lemon Glazed Cake Recipe

For Base Cake of Vanilla Sponge

To start with, we will begin with the Vanilla Sponge Cake as the base of this Glazed Tea Cake. I have already shared the recipe twice on my blog, so this time, I am just going to leave you the link of my 1-2-3 Vanilla Sponge Cake Recipe. Otherwise, if you have a fool-proof Vanilla Sponge Cake recipe that you can rely, then you can use that as well. 

For Lemon & Thyme Glaze Recipe 

The glaze is absolutely basic one that uses Caster Sugar or Finely ground Granulated Sugar. So, here’s what we are going to need:

  • 1/2 cup Caster Sugar or Granulated Sugar
  • 2 tbsp Lemon Juice
  • Thyme-infused Salt or 1/4 tsp Salt + A pinch of dried Thyme
  • Zest of 1 Lemon

Process: Take a mixing bowl and combine the ingredients. If you find the glaze too thick then add a drop of Lemon Juice or even Melted Butter. If it’s too thick for some reason, add a tsp. of Caster Sugar. Mix till you get a pourable consistency. 

Once your Vanilla Sponge Cake has cooled down completely, place it on a wire rack and pour the Lemon & Thyme Glaze over the cake. Allow it to cool down again before slicing and serving.
