Soya chura or soya granules recipes are God sent! They are quick, easy and absolutely nutrition packed. In India, where a large chunk of population prefer plant-based diets, soyabean products like soya chunks, soya mince, soy milk, tofu, etc. provide an alternate source of protein.

Boil a saucepan of water. Turn off the heat and pour the soya granules in it. Let it soak for a couple of minutes or until it fluffs up and doubles in volume.
Sieve the granules and discard the water. Wash the granules in cold water 2-3 times to remove the soya odour. use potable or drinking water for thus purpose.
Keep it aside.
Now, heat oil in a pan and add cumin seeds and bay leaf.
Now add the chopped Onions, Tomato puree, ginger-garlic paste and fry the mix. Once it dries up in to half, add the powdered spices, chopped green chilies and cubed potato and fry till it dries up.
As we have used oil conservatively, I do not expect the spice mix to release oil at the edges.
Now, add the washed soya granules in the spice mix and pour ½ cup of water to mix the spices up.
Put on the lid and let it simmer for a while. Once the potato cubes are cooked, check the water content. It should be dry, so if there is extra moisture, turn the heat a bit high and sir-fry it it dries up completely.
Serve with a garnish of finely chopped fresh Coriander leaves.
