This Bengali style Omelette Curry recipe is hands down the easiest egg recipes you will find out there. It has an omelette sliced up in thick strips and dunked in a delicious and mildly spicy gravy. Perfect as a simple lunch recipe, it pairs well with both rice as well as flatbreads like rotis or paranthas.

Like most of the Bengali recipes, it is very light in terms of spices and, is nuts-free & gluten-free. We are going to make a basic gravy using onion, garlic, ginger and tomatoes along with a couple of whole spices. We will make the omelette separately and then drop it in the gravy before serving.

Egg omelette curry in Bengali style

Also known as ‘Dimer Omelette er Jhol‘, this one is perhaps one of the cheat meals of Bengali cuisine. Recipes like this one here crop out of necessity to make a nourishing dish with minimum ingredients. Eggs are something which is almost always available in a Bengali kitchen. So, if nothing pops into your head for a healthy and easy dinner recipe, you can definitely go for this omelette curry.

How to make Dimer Omelette Curry – Ingredients list

  • Eggs
  • Onion
  • Ginger & garlic
  • Tomatoes
  • Mustard Oil – alternate would be any neutral oil
  • Whole spices like Bay leaf, Cinnamon, Green Cardamom, Cloves, Black Cardamom
  • Seasonings like Salt & Pepper
  • Powdered spices like Turmeric Powder, Red Chilli Powder
  • Ghee – optional
  • Fresh Coriander leaves for garnish

When you are running low on energy and time, this egg curry recipe will come handy. In fact, it is so versatile that you can prepare the base gravy as you prefer to. I have outlined my way of making it, but you can totally give your own twist to it.

If you wish to make it creamier and rich, then you can add some fresh cream, butter or even whisked yoghurt in it. You can also play around with the spices here by using garam masala powder instead of whole spices. The sky is the limit here.

Ingredients
  • 4 nos. Eggs
  • 2 Onion Medium
  • 6 Cloves of Garlic
  • ½ inch Ginger
  • 3 Tomatoes Medium
  • 1 Bay Leaf
  • 2 Green Cardamom
  • 4 Cloves
  • ½ inch Cinnamon
  • Salt to Taste
  • ½ tsp Turmeric Powder
  • ¾ tsp Red Chilli Powder
  • 1 tbsp Ghee
  • 2-3 tbsp Mustard Oil
  • Chopped Coriander Leaves For Garnish
Instructions
  1. Finely chop the onion, garlic and tomatoes. Grate the ginger.

  2. In a pan, heat the mustard oil and add the dry whole spices in it. As they sizzle, add the chopped onion, garlic, grated ginger and tomatoes.

  3. Fry this mix till it has dried up. Now add the powdered spices and salt. continue frying it on medium-low heat till you see that it has dried up completely.

  4. Now add ½ cup water in it and give it a stir. Cover and cook.

  5. Meanwhile, heat some oil in a frying pan for the omelettes. Whisk the eggs with salt and pepper and prepare one big omelette.

  6. Once it is done at one side, start rolling it in a log. Take it out on a plate and slice it in thick ribbons.

  7. Now, drop this sliced omelette in the prepared gravy. Top it with some ghee and finely chopped coriander leaves. Serve hot.

Recipe Notes

Instead of slicing the Omelette into ribbons, you can also cut in into squares and drop them in the gravy.
