When the farmer’s market is flooded with those seasonal dark red carrots, which we often use for making Indian popular dessert, Gajar ka Halwa, I believe that is the perfect time to make some Carrot Cake as well. And, if you are looking for controlled portion size recipe in a cake, then this mug cake recipe is absolutely perfect for you. 

Of late, I have become a huge fan of mug cakes. It is quick, easy to bake and then serve, and makes a perfect party dessert for my guests. In fact, I even bake mug cakes for myself over the weekend and chill them for my busy weekday breakfast option. 

This recipe for carrot cake is absolutely fuss-free and totally forgiving if you want to play around with the ingredients. For instance, I have used a pinch of Cinnamon powder in this recipe for its sweet & warm aroma. However, it tastes equally good with freshly pounded Cardamom powder, instead of Cinnamon. 

This is an oil based carrot cake recipe in a mug,which means it has mush less fat content as compared to those recipes which calls for butter. Also, I have used Brown Sugar instead of normal granulated sugar, which gives it a nice colour and moisture.

Ingredients
  • cup All Purpose Flour
  • 1 tbsp Cornflour
  • 2 tbsp Brown Sugar granulated
  • 3 tbsp Carrots grated
  • 2 tbsp Chopped Walnuts
  • 2 tbsp Refined Oil
  • ½ tsp Baking Powder
  • ½ tsp Baking Powder
  • ¼ tsp Cinnamon Powder
  • 2-3 tbsp Milk
  • 1 Egg
Instructions
  1. Pre-heat the oven at 170°C

  2. Prepare the mugs for baking by brushing them with oil.

  3. Mix the dry ingredients and sieve them.

  4. In a separate bowl, whisk the egg till fluffy. Then add the sugar and oil and whisk again till the sugar dissolves.

  5. Now, add the grated Carrots,chopped Walnuts and milk.

  6. Add the dry ingredients in 2 parts and gently mix everything together.

  7. Divide the batter in 2 mugs and bake till done. It will take somewhere around 17-19 minutes.

  8. Once done, take them out and let it cool.

  9. Top the cakes with some whipped cream and chopped walnuts.
