Breakfast Recipe Chicken Sandwich

Well, don’t know about you but give me anything, I am happy to put it between two slices of bread and make it a happy meal for myself. And for this recipe, you hardly need anything fancy. It’s one of those of those dump-in-a-bowl kind of recipes that, not only saves you from washing loads of dishes, but also lets you have that ultimate satisfaction of making a meal in your kitchen!

Ingredients
  • 1 cup Boiled Chicken pieces Shredded in threads
  • 3/4 cup Mayonnaise Use Yogurt if looking for low-calorie version. Use Cheese spread if looking for more options.
  • 2 tbsp Olive Oil
  • 1/2 Onion Finely Chopped
  • 2 Green Chilies Finely Chopped
  • 1/4 cup Coriander Leaves Finely Chopped
  • Salt to Taste
  • 1 tbsp Italian Seasoning
  • 8 Slices of Sandwich Bread
  • 4 Lettuce leaves
Instructions
  1. Mix chicken pieces with spices and chopped onion, chilies and coriander leaves. 

  2. Whisk the mayonnaise with olive oil and mix it to the chicken. Mix everything well. Season it with salt as per your taste.

  3. Lightly toast the slices of bread. (I prefer untoasted, but then, its me!) 

  4. Spoon out a generous amount of chicken filling and level it on a slice of bread. Place a lettuce leaf on it. Press another slice on it and cut it in triangles.

  5. Serve immediately.
