How to buy button mushrooms?
Once you get the mushrooms home, store them in the original pack in the refrigerator. It is best to consume them in the next couple of days.
Most of the mushroom packs in the supermarket have a date on them. Check for the freshest ones, not older than 10 days. If you are buying from your local vegetable vendor then see that the mushrooms are spotless and white. The stalks should be clean and white, and there should be no browning.
How to clean button mushrooms?
I prefer washing them once before preparing them. So, discard the parts of the foot of the mushrooms which have turned brown. If any portion of the head also shows browning, then gently carve that part out. Once done, rest everything is completely edible.
Most chefs or experts would say, “Do not wash Mushrooms. Just wipe them with a clean cloth and cook.” Most of the time, I find packs of mushrooms quite clean, meaning without dirt sticking to the foot of the mushrooms. However, every once in a while, I receive packs that contain dirty ones.
Take a big bowl of cold water and dip these mushrooms in it. Gently scrub them with your fingertips and remove any dirt sticking to it. Take them out of the water and allow them to drain in a sieve. While prepping for the recipe, slice them and they are ready to cook!
Ingredients to make Chilli Mushroom with gravy
- Button Mushrooms
- Cornflour
- Garlic
- Onion
- Capsicum or Bell Peppers
- Green Chilies
- Salt
- Dark Soy Sauce
- Vinegar, white vinegar or apple cider vinegar
Recipe instructions to make chilli mushroom
- In a mixing bowl, take the mushrooms, sprinkle some cornflour and salt, and toss them so that each piece gets coated nicely
- Heat some oil in a pan and shallow fry the mushrooms till they turn golden. Take them out when they turn golden
- In the same pan, add the garlic and saute for a couple of seconds before adding the onion and capsicum. Toss them together on a medium-high flame.
- Now, add the sauces, green chillies and around ¼ cup of water to bring everything together. Toss the fried mushrooms in and allow them to simmer for a minute or two. The gravy will thicken on its own.
- Check for seasoning and add salt as needed. Serve hot.

It takes hardly 15 minutes to get this thing going from pan to plate on a busy weeknight. I like the mushrooms fried a bit crisp so I kept them whole and powdered them with some cornflour before giving them a shallow fry. Once my gravy was ready, I dropped them in the end, gave it a boil and served.
But you can totally skip this part and toss them directly in the oil before adding them back into the gravy. Just ensure that the mushrooms are cooked thoroughly. If you are sceptic, you may cut them into halves. This way the cooking time gets reduced as well.
Serving suggestions
This spicy chilli mushroom goes best with stir-fried rice. For instance, I served it with my Broccoli Fried Rice which is light and mildly flavoured with freshly cracked peppercorns. On busy days I like to pair it with chapattis or rotis as well.

- 200 gms Button Mushrooms
- 4 tbsp Refined Sunflower Oil
- 2 tbsp Cornflour
- 6 Cloves of Garlic Cloves
- 2 Onion Medium, cut in cubes
- 1 Capsicum Small, Cut in cubes
- 2 Green Chilies
- 2 tbsp Soy Sauce
- 1 tbsp Vinegar
- 1 tbsp Chilli Sauce
- Salt to Taste
