Chocolate Walnut Mug Cake Recipe

I am a big fan of the combination of chocolate and walnuts! I think they make an amazing combination for a dessert. I have a Chocolate Date Walnut Loaf Cake on my blog, which has been quite popular among my readers on Facebook.

This time, I have made that same recipe in a mug. This is strictly a no-sharing dessert you can make for yourself. Plus, it limits your calorie intake since it is portion-controlled.

Ingredients for this Chocolate Walnut Mug Cake recipe (serves 2)

  • ⅓ cup All Purpose Flour
  • 1½ tbsp Unsweetened Cocoa Powder Hershey’s
  • 4 tbsp Milk – add 1 tbsp more in case of eggless mug cake
  • 2 tbsp Refined Sunflower Oil – or any other neutral-flavored oil
  • 1 Egg – omit in case you prefer eggless cakes
  • 1 tbsp Cornflour
  • 2 tbsp Brown Sugar
  • 1 tbsp Sugar – Optional – if you prefer sweeter cakes
  • ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • 4 tbsp Walnuts Chopped

Instructions to make rich dark chocolate walnut mug cake

  • Pre-heat the oven to 180°C
  • Prepare the mugs for baking by brushing them with oil or butter
  • Mix the dry ingredients and sieve them
  • In a separate bowl, whisk the egg till fluffy. Then add the sugar and oil and whisk again till the sugar dissolves. Omit the egg in case you are making an eggless cake
  • Add the dry ingredients in 2 parts, alternating with milk, and gently mix everything. Finally, add the chopped walnuts
  • Divide the batter into 2 mugs. Sprinkle some extra chopped walnuts on top for added crunch and flavor.
  • Bake till it is done at the centre. It will take somewhere around 17–19 minutes.
  • Once done, take them out and let it cool.

Tips and Tricks

  • Adjusting Sweetness: If you prefer a sweeter mug cake, increase the amount of granulated sugar. We prefer mildly sweet cakes, so often my cakes use a limited amount of sugar.
  • Flavour Variations: Cinnamon Twist: Add a pinch of ground cinnamon to the dry ingredients for a warm and cosy flavour.
  • Coffee Infusion: Mix in a dash of instant coffee or espresso powder to enhance the chocolate flavour.
  • Microwave Timing: You can also bake this mug cake in your Microwave oven. Simply adjust the cooking time based on your microwave’s wattage. Start with 1 minute and check the cake’s doneness. Add more time if needed.
  • Mug Size Matters: Use a standard 12-ounce mug for best results.

Recipe Variation Ideas & Substitutions

  • Flour Alternatives:
Almond Flour: Replace all-purpose flour with almond flour for a gluten-free version. Keep in mind that almond flour tends to be denser, so adjust the quantity if needed.
Whole Wheat Flour: For a healthier option, use whole wheat flour instead of all-purpose flour.
  • Sweeteners:
Honey or Maple Syrup: Swap granulated sugar with honey or maple syrup. Adjust the sweetness to your liking.
Stevia: If you’re watching your sugar intake, use stevia (a natural sweetener) in place of sugar.
  • Dairy-Free Options:
Almond Milk: Use almond milk or any other plant-based milk if you’re lactose intolerant or prefer a dairy-free version.
Coconut Oil: Substitute vegetable oil with melted coconut oil for a tropical twist.

Serving suggestions

  • Top it with a scoop of vanilla ice cream.
  • Drizzle melted chocolate or caramel sauce over it.
  • Sprinkle with powdered sugar or cocoa powder.
  • Pair it with a cup of coffee or hot chocolate.
