I have made my stroganoff sauce in a classic way, by using sour cream but you can always try out the alternates I have given here. For pasta, the choice is yours. I find farfalle pretty, but I know for a fact that this chicken stroganoff pasta recipe works with just every kind of pasta you have out there.

How to make this creamy Mushroom & Chicken Stroganoff Pasta – Ingredients list
- Farfalle Pasta
- Chicken Breast cut in pieces
- Button Mushroom
- Butter & Olive Oil
- All-purpose Flour
- Garlic
- Onion
- Sour Cream – alternate would be Fresh Cream or Milk
- Fresh Cream – alternate would be full fat Milk
- Salt & Pepper
- Mustard Sauce
- Finely chopped Coriander Leaves
Step-by-step instructions for this Chicken Stroganoff with Mushroom Pasta recipe
- Boil the pasta as per the packet instructions. Keep it around 75% cooked
- Simultaneously, warm up a frying pan. Drop some butter and olive oil in it
- Now add the finely chopped garlic and onion and let them sweat for a couple of minutes. We are just looking to cook them till they loose the raw smell
- Now, add the sliced mushrooms and let them cook for a couple of minutes
- Add the chicken breast cut in smaller pieces. You can also cut them in thin strips. Saute everything together till you see the chicken almost partially cooked
- Now sprinkle some all-purpose flour and give it a stir
- Now we are going to make the stroganoff sauce base for the pasta. So, add the fresh cream or milk and give everything a very good mix. Break the lumps, if any
- Add around 1/2 cup of the pasta water, sour cream, pepper and mustard sauce. Give everything a good mix. Let it simmer till the chicken is cooked well
- Now drop the boiled pasta in it
- Check for seasoning and add salt accordingly. Let the sauce thicken and coat the pasta nicely
- Turn off the heat and sprinkle some finely chopped fresh coriander leaves
- Serve hot
Variations to this Chicken Stroganoff pasta recipe
This creamy Chicken Stroganoff pasta is a complete meal on its own. At best you might want to go for a couple of pieces of garlic breadsticks as a side to this. However, this doesn’t stop here. As I mentioned you can use a variety of pasta to make this pasta dish. I chose farfalle but I can also vouch for penne, fettuccini, fusilli, pappardelle, and spaghetti.
You can also totally skip the pasta and serve it as a side to rice or a basket of bread. All in all, this one is a very convenient yet delicious pasta recipe with chicken breast.
