Dim Pauruti—also known as Indian Masala French Toast, Anda Bread, or Savory Egg Toast is a staple in Bengali households and Indian street food stalls. It is a savory twist on classic French toast that combines fluffy bread soaked in a spicy egg mixture with onions and chilies, and then fried till golden and crispy.
This anda bread or ডিম টোস্ট রেসিপি is perfect as an easy breakfast recipe, evening snack, or even a light brunch option. Whether you call it Anda Bread Fry or Masala Egg Toast, this dish is budget-friendly and super versatile.
Ingredients for Dim Pauruti recipe
- 8 slices of bread (white, whole wheat, or double roti for authenticity)
- 6 large eggs
- 2 tbsp milk (optional, for a fluffier texture)
- 1 small onion, grated
- 1-2 green chilies, grated or finely chopped (adjust for spice level)
- 2 tablespoons fresh coriander leaves (cilantro), chopped – optional
- 1/2 teaspoon red chili powder (or to taste) – optional
- Salt, to taste (about 1/2 teaspoon)
- 1-2 tablespoons butter or oil
- Optional add-ins: 1/2 teaspoon grated ginger, a pinch of black pepper, or cheese for a cheesy egg toast variation
Recipe instructions
- Prepare the Egg Mixture: In a wide, shallow bowl, crack the eggs and whisk them until frothy. Add the milk (if using), chopped onion, green chilies, coriander leaves, turmeric, red chili powder, ginger, and salt. Mix everything well
- Heat the Pan: Place a non-stick skillet or tawa over medium heat. Add 1 tablespoon of butter or oil and let it melt, swirling to coat the pan evenly.
- Dip and Fry the Bread: Dip each bread slice into the egg mixture, ensuring both sides are coated but not soggy (about 10-15 seconds per side). Place the soaked bread in the hot pan. Fry for 2-3 minutes on each side until golden brown and crispy. If the mixture sticks to the bread, that’s perfect—it adds texture like in a classic Bread Egg Fry.
- Serve Hot: Transfer to a plate and repeat with the remaining slices. Serve immediately with ketchup or green chutney.
Recipe variations
- Make it Cheesy: Sprinkle grated cheese on top while frying for a gooey Cheesy Anda Bread twist.
- Spice Level: For milder Savory French Toast, skip the green chilies or use paprika instead of red chili powder.
- Bread Choice: Use stale bread for better absorption, or try pav (Indian bread rolls) for a Bombay Toast vibe.
- Vegan Option: Swap eggs with a chickpea flour (besan) batter to make an eggless Masala Bread Toast.
- Storage: Best eaten fresh, but you can reheat in a toaster oven. Avoid microwaving to keep it crispy.
This Street Style Anda Bread recipe is not just quick, but also versatile and packed with protein, making it ideal for busy weekdays or lazy weekends.
