Among all the mango recipes on my blog, this Mango Swirl Cake with Cardamom Cream is the highlight. This dessert comes with a base of my signature Vanilla Cake topped with cardamom flavoured cream with a crown of Mango slices arranged beautifully in a swirl.

This recipe can be easily converted into a vegan Mango Cake dessert by using a vegan vanilla cake for the base. The rest of the recipe here has vegan ingredients as I have used dairy-free whipping cream.

Often, we all love indulging ourselves in some fancy dessert options without thinking about the calories and the push-ups it would bring along later. How about if I say that this fancy Mango cake is probably one of the easiest centrepiece dessert option to adorn your party dinner table.

I know what you are thinking right now! That I have probably gone nuts or something. But trust me on this when I say that this recipe is one of those ones where you can pull together the whole shebang without breaking a single sweat.

In fact, you can make and prepare this dessert beforehand so that you are not pressed for time on the day of your party or get-together.

Varieties of Mango perfect for this Mango Cake recipe

There are a number of varieties of Mangoes available in the market. Here, we are looking for fleshy and solid varieties (non-fibrous) which would give us clean slices so that we can decorate the top in a neat manner.

For the base of the cake, I have used my Vanilla Sponge Cake Recipe which has been tried and tested over a million times and has always been a hit. You can get the Vanilla Sponge Cake recipe here. (Recipe Card for the same attached in the end of this post)

You can use any other Vanilla Cake recipe, preferably one without butter. This Mango Cake is best served chilled as a dessert. A butter cake tends to get hardened, so an oil-based cake would be more soft & moist.

There are several Mango Cake decorating ideas online. I have sliced the fruit lengthwise and arranged them in a swirl. You can chop them in cubes and pile them on the top. You can also make some puree of the fruit and spread on the top, making some drop by the sides.

Basically you can decorate the cake in any way you like!

This is a unique take on Mango cake recipe. This summer try this super exotic Mango dessert recipe where a cake is layered with Cardamom flavored cream and Mango slices.

Ingredients
  • 1/2 cup Whipping Cream Unsweetened 120ml
  • 2 tbsp Granulated Sugar 30 gms
  • 1 tsp Cardamom Powder 5 gms
  • 1/2 tsp Rose Extract 2.5ml – Adjust as per taste.
  • 2 Mangoes Finely Sliced
Instructions
  1. Prepare the Cardamom Cream by whipping the cream till soft peaks. 

  2. Add the Rose Extract and Cardamom Powder and whisk till stiff peaks.

  3. Take the Cake and slice it horizontally. Fill the cream between the two layers and allow it to set in refrigerator for 15 minutes. 

    (I have included the baking time of 40 minutes for the cake in this recipe)

  4. After that crumb coat and let it set for another 10-15 minutes.

  5. Now, finally pile some more cream on the top of the cake for the ultimate flavour of cardamom and rose. 

  6. Take the Mango slices and start arranging them in overlapping circles to look like a flower. 

  7. Chill and Serve

Here, I will tell you why you should stick this easy homemade vanilla cake recipe to your fridge because you can make so many different types of desserts using this basic cake recipe.

Ingredients
  • 1 cup All Purpose Flour With 2 tbsp of it replaced with equal amount of Cornflour
  • 1/3 cup Refined Oil
  • 1/3 cup Granulated Sugar
  • 1 tsp  Baking Powder
  • ¼ cup Milk
  • 1 tsp  Vanilla Extract
  • 2 Eggs
Instructions
  1. Take a bowl and mix all the dry ingredients together. Sieve them through and keep them aside.
  2. Now, in another bowl, whisk the eggs with sugar and a pinch of salt till light and almost 3 times in its volume.

  3. Add oil and vanilla extract to the eggs and whisk them vigorously till light and airy.
  4. Now, add the dry ingredients in three parts, alternating with milk and mix gently. Once you see that the dry ingredients have incorporated nicely, stop mixing.
  5. Now, pour the batter in a slightly oiled and floured cake tin and bake it at 180c for 30-40 minutes. Once you see that the cake has baked and the sides are pulling back from the edges, you know that it is done.

  6. Take it out and allow it to cool in the cake tin for 10 minutes before turning it upside down on wire rack to cool down completely.
  7. Serve this cake as it is or drizzle it with a glaze. Or, if you are feeling fancy then you can frost it with whipped cream or cream-cheese frosting.
