Mornings are hurried, always. Whether you are off to your office or you have kids to send off to school. One thing is common, and that is , you are always pressed for time. So, one thing that is needed more than anything is, quick and healthy recipes for breakfast and lunch. This Egg Mayonnaise Sandwich recipe puts the ticks in every check box.
Meal Planning 101
My usual mornings begin from the night before when I start planning for my meals for the next day. Before I go to bed, I usually like to set the menu for the next day so that I can do some of the necessary preparations earlier.Often this includes soaking of lentils, chopping of vegetables or boiling the eggs if I am planning something around it.
For this Egg Mayonnaise Sandwich, I usually boil the eggs night before and let them steep in the same water for the whole night. So, that next morning I don’t have to worry about boiling the eggs and then waiting for them to cool off before peeling. Instead, I start off by peeling them off directly and going about with the sandwiches which is a matter of another 2-3 minutes.
Honestly speaking, this is a quick and healthy snack recipe which is good for anytime of the day. Often I end up making the sandwich fillings in excess which I later stuff in another couple of slices of bread and enjoy a light evening snacks with coffee or tea.
Almost everything that goes in the filling can be customized to suit your taste. If you aren’t much fond of raw onions then you can easily skip them. If you wish to have some parsley then please add some. One thing that made it very interesting was SPRIG Mango & Jalapeno Hot Sauce that added a touch of heat into this. It went very well with the mellowed taste of boiled eggs and mayonnaise.
Egg Sandwich Recipe Without Onion
Below is the recipe video for Egg-Mayonnaise Sandwich which doesn’t use Onions in it. It has mayonnaise, slices eggs and Italian seasoning along with Salt & Pepper. The simplest of all breakfast recipes!
This Egg Mayonnaise Sandwich recipe is a quick and healthy recipes for breakfast and lunch.
- 4 Bread Slices
- 2 Eggs Hard Boiled
- 2 tbsp SPRIG Mango and Jalapeno Hot Sauce
- Salt to Taste
- 1 tbsp Onion Finely Chopped
- 1 tbsp Coriander Leaves Finely Chopped
- A pinch of Pepper
- 1/2 tsp Red Chili Flakes
- 4 tbsp Mayonnaise

Toast the slices of bread and keep them aside.

Now, peel the eggs and put them in a bowl. Add rest of the ingredients and mash them together. Keep them chunky.

Now, take a slice of toasted bread and put a heaping 2 tablespoons of the filling prepared on it. Spread it evenly and place another slice of bread on it. Cut it diagonally into 2 triangles and serve.
