Chocolate Chip Cookies Recipe Highlights
Whichever way you try this choco chip cookies recipe, it is a total gamechanger. I am pretty sure after trying my way, you will never go back to your old chocolate chips cookies recipe, leave alone buying them.
The recipe is quite simple after you have gathered all the chocolate chip cookies ingredients at one place. Simply whisk the melted butter with sugar till it becomes smooth and then add rest of the ingredients in it till you get a soft and supple lump of dough.
The next step is where you have to be very careful and patient. That is chilling the dough. I cannot emphasize enough on how important it is to chill the chocolate chip cookie dough for at least 30 minutes before baking.
I have seen many recipes that tell you to stick the entire lump of dough into the freezer for chilling. But I suggest you divide the dough into equal portions for the cookies and then chill it. Scooping out soft chocolate chip cookie dough is far easier than working with the chilled and hardened dough!
There are several reasons to chill your cookie dough. First the dough gets rested and the cookies have a much better texture. As the butter hardens up, you get chunky and chewy cookies, rather than those flat-out crunchy ones. Plus the flavours develop as it gets rested.
For chilling the dough, simply line a baking sheet with a parchment paper and scoop out a tablespoon full of the dough to plonk it over the sheet. Once you have divided the entire cookie dough, stick it into your fridge if you are planning to bake them fresh. Otherwise, wrap the tray with clingfilm sheet if you wish to bake them later.
When you are ready to bake, simply pre-heat your oven at 180C and line these cookie dough balls on a baking tray with 2 inches gap in between. They spread very little as they are chilled and rested. Bake them till they turn golden at the edges and the base has turned firm.
The top of the cookies might still feel soft to touch but don’t worry. They will firm up as they are kept on a wire rack to cool.
Make-ahead or Freezing Option
As I told you earlier, this chocolate chip cookie dough can be frozen easily. Like I like to divide the entire cookie dough into two parts, bake one half and freeze the rest half of it for later emergency chocolate chip cookie cravings. They stay well frozen for over a month, beyond that I have never tried. Well, I get such cookie cravings too often for them to last!
These cookies, once baked, stay well for over a week in an airtight container. Keep them at a cool and dry place for better storage.
