The secret to achieving fluffy pancakes lies in a few key factors:

  1. Leavening Agents: Baking powder and/or baking soda are essential ingredients that create air bubbles in the batter, causing the pancakes to rise and become light and fluffy.
  2. Buttermilk or Acidic Ingredient: Using buttermilk or adding a splash of acidic ingredients like lemon juice or vinegar helps activate the leavening agents, resulting in a tender texture and fluffy pancakes.
  3. Don’t Overmix: Overmixing the batter can develop gluten, resulting in tough pancakes. Mix the ingredients until just combined to get the perfectly fluffy texture in the pancakes.
  4. Resting Time: Allowing the pancake batter to rest for a few minutes before cooking allows the gluten to relax and gives the leavening agents time to work, resulting in a fluffy pancake every time.

Ingredient list:

  • Eggs 2nos – separated in yolk and whites
  • Milk 2 tbsp – preferably full-fat for a hint of richness.
  • Honey 2 tbsp
  • Vanilla Extract 1 tsp
  • Flour 1/4cup

Recipe Instructions:

  • In a large mixing bowl, whisk together egg yolks, milk, vanilla extract & honey. Keep it aside.
  • In another mixing bowl, whisk the egg whites with a pinch of salt till you get soft peaks.
  • Combine the egg white gently with the yolk mix. Do it in parts so that you can retain the air bubbles inside.
  • Add the flour in parts and mix very gently.
  • Heat a non-stick skillet or griddle over medium heat. Pour 2 tablespoons of batter onto the skillet for each mini pancake or you can add more for bigger ones.
  • Cook until bubbles form on the surface of the pancakes and the edges start to look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.
  • Repeat with the rest of the pancake batter.
