But with this recipe you can work around all the pain points in a gajar halwa recipe. With the help of a couple of gadgets and kitchen hacks, you can easily make some delicious gajar ka halwa without breaking ANY sweat. Here I have shared multiple ways of making carrot halwa.
Gajar halwa with khoya
If you have khoya in your pantry then your life is pretty much sorted. I mean it can’t get easier to make some delicious gajar ka halwa. After all the milk solids in khoya do most of the work of adding milky richness to the dish.
Ingredient:
- 1 kilo Red Carrots
- 100 gms Khowa
- 1/2 cup Ghee or more
- 1 teaspoon Green Cardamom Powder
- 1/2 cup Sugar
- 1/4 cup Chopped Nuts & Raisins
Recipe Instruction:
- Grate the Carrots manually or in a food processor. Make sure they are string-like, not finely grated.
- Take a heavy bottom pan, heat the ghee in it, and add the grated carrots.
- Toss them gently and let them fry for 4-5 minutes. The aroma changes and the color darkens as the carrots begin to caramelize.
- Now crumble the khowa and add it to the carrots. Add the Cardamom powder and sugar. As the sugar melts you would notice the release of some water. Let them evaporate completely as the sugar caramelizes and gives the dark reddish-brown color to the halwa.
- Once it dries, turn off the heat. Add the sliced almonds and mix. Serve hot and fresh or cold.
Gajar ka halwa without khoya
You can make this Indian dessert of Carrot Halwa without any khoya. All you have to do is get some full-cream or full-fat milk and a heavy hand of cow’s milk ghee or clarified butter to make rich and delicious gajar halwa.
Ingredients:
- 750 gms Carrots Approx 8-10 nos.
- 1 litre Full Cream Milk
- 1/2 cup Ghee or Clarified butter
- 2 tsp Cardamom Powder
- 1/4 cup Almonds Sliced
- 1/2 cup Sugar
Recipe Instructions:
- Grate the Carrots manually or in a food processor. Make sure they are string-like, not finely grated.
- Take a heavy bottom pan, heat the ghee in it, and add the grated carrots.
- Toss them gently and let them fry for 4-5 minutes. The aroma changes and the color darkens as the carrots begin to caramelize.
- Now, add the milk and allow it to simmer for the next 45-50 minutes. Give it an occasional stir so that it doesn’t boil over.
- Once the milk has condensed completely, add the Cardamom powder and sugar. As the sugar melts you would notice the release of some water. Let them evaporate completely as the sugar caramelizes and gives the dark reddish-brown color to the halwa.
- Once it dries, turn off the heat. Add the sliced almonds and mix. Serve hot and fresh or cold.
Gajar halwa using Milkmaid
Another trendy way is making the gajar ka halwa with milkmaid. With a handful of carrots, ghee, and a can of milkmaid, you can conveniently make some delicious carrot halwa in absolutely no time.
Ingredients:
- 750 gms Carrots Approx 8-10 nos.
- 1 200ml Milkmaid Can
- 1/2 cup Ghee or Clarified butter
- 2 tsp Cardamom Powder
- 1/4 cup Almonds Sliced
- 1/2 cup Sugar
Recipe Instructions:
- Grate the Carrots manually or in a food processor. Make sure they are string-like, not finely grated.
- Take a heavy bottom pan, heat the ghee in it, and add the grated carrots.
- Toss them gently and let them fry for 4-5 minutes. The aroma changes and the color darkens as the carrots begin to caramelize.
- Now, add the milkmaid and mix everything

Instant carrot halwa using pedas
Often I make gajar halwa using an EASIER option that doesn’t need khoya, milk or milkmaid. All we need is a couple of pedas or khoya barfis. These are usually made of milk solids and are an excellent substitute for khoya or milk for a gajar halwa recipe. Follow the recipe for gajar halwa recipe with khowa as shared above.
Here, I am using Kesar Pedas which are saffron-flavored Pedas, which are pretty commonly available in the sweet shops. If you do not get the saffron-flavored ones, then go for the elaichi flavored or even the plain ones.
Tips & Tricks
Feeling lazy about grating the carrots? I have a simpler way of going about that. If you have an electronic chopper or a food processor, then finely chop the carrots in it. I use this Glen Electronic Vegetable chopper, which I am going to link here. Wash and peel them before roughly cutting them into 3-4 big pieces. Then chop them in the chopper to get them ready for the halwa.
That’s it! No more grating a chunk load of carrots. Simply chop them in your chopper or food processor.
Another tip flat-bottom bottom pan for making this recipe instead of a kadhai. It saves time considerably.

Wash, clean & peel the carrots

Grate the carrots, if you can. Or, use a chopper or food processor to finely chop the carrots.

Heat the ghee in the frying pan. Add the chopped carrots till they shrink & soften.
In terms of ghee you can be as generous as you wish. I have used it in moderation.

Now, add the sugar. Mix it up and allow it to melt.
Again, I have used the sugar in moderation as we prefer the halwa to be mildly sweet. You may add more, if you prefer it sweeter. Please note that the pedas will also add sweetness.

As the sugar melts and caramelizes, you will see the colour of the carrots change and darken. Crumble the pedas and add it to the carrots.

Mix everything. You will note that the pedas will melt and mix up nicely with the carrots. Add the chopped nuts at this stage.
Check for sweetness and add more if necessary.
