But with this recipe you can work around all the pain points in a gajar halwa recipe. With the help of a couple of gadgets and kitchen hacks, you can easily make some delicious gajar ka halwa without breaking ANY sweat.

However, I have another EASIER option here which doesn’t even need khoya, milk or milkmaid. All we need is a couple of Pedas, a very popular Indian sweet you get in almost every shop, big or small. Those are made out of milk solids and are an excellent substitute to khoya or milk for a gajar halwa recipe.

Here, I am using Kesar Pedas which are saffron flavored Pedas, which are pretty commonly available in the sweet-shops. If you do not get the saffron flavored ones, then go for the elaichi flavored, or even the plain ones.

Feeling lazy of grating the carrots? I have a simpler way of going about that. If you have an electronic chopper or a food processor, then finely chop the carrots in it. I use this Glen Electronic Vegetable chopper, which I am going to link here. Simply wash and peel them before roughly cutting them in 3-4 big pieces. Then chop them in the chopper to get it ready for the halwa.

That’s it! No more grating a chunk load of carrots. Simply chop them in your chopper or food processor.

Another tip, use a flat bottom frying pan for making this recipe instead of a kadhai. It saves time considerably.

Ingredients
  • 1 kilo Carrots 7-8 nos.
  • 3 tbsp Ghee or Clarified Butter
  • 5 tbsp Sugar For moderate sweetness
  • 4 Kesar Pedas approx. 125 gms
  • 1/2 cup Chopped Dried fruits Cashew, Raisins, Almonds, Walnuts, Pistachios, etc.
Instructions
  1. Wash, clean & peel the carrots

  2. Grate the carrots, if you can. Or, use a chopper or food processor to finely chop the carrots.

  3. Heat the ghee in the frying pan. Add the chopped carrots till they shrink & soften.

    In terms of ghee you can be as generous as you wish. I have used it in moderation.

  4. Now, add the sugar. Mix it up and allow it to melt.

    Again, I have used the sugar in moderation as we prefer the halwa to be mildly sweet. You may add more, if you prefer it sweeter. Please note that the pedas will also add sweetness.

  5. As the sugar melts and caramelizes, you will see the colour of the carrots change and darken. Crumble the pedas and add it to the carrots.

  6. Mix everything. You will note that the pedas will melt and mix up nicely with the carrots. Add the chopped nuts at this stage.

    Check for sweetness and add more if necessary.

  7. Serve hot or chilled.
