Instant Pot Caramel Bread Pudding Recipe

Bread Pudding is one of those desserts that always bring back childhood memories. We all love that slightly thickish pudding-like dessert with a caramel top. Chilled and ready to dig in! Always a party pleaser and a summer favourite dessert. This Instant Pot Creme Caramel Bread Pudding is probably the easiest summer brunch recipe that you can serve your friends and family.

Just blend everything together and put it into your Instant Pot or Nutricook Smart Pot for steaming. It is like while you grab a bite or a sip, your dessert is an auto-pilot. Wanna know why I think this is the BEST Bread Pudding recipe?

Leftover management. These two words give me so much joy these days. I hate having odd bits and pieces of food left in my fridge. Most often it’s the thick ends of the bread loaves. Nobody eats those, and I end up toasting them before slathering some butter for my breakfast.

So, every week I collect these bread slices and leftover challah or croissants to make a big batch of this baked caramel bread pudding in the oven or in a pressure cooker. Next, all I have to do is soak them up in warm milk with some sugar and vanilla extract. Once they get soft and mushy, blend it and bake or steam it.

Now, if you want to give it a fancy look, then get going with some homemade caramel syrup. Pour it in the base of the dish before pouring the pudding and covering it for steam baking.

How to make Caramel Bread Pudding in Instant Pot – Ingredients list

  • Milk for soaking
  • Bread Slice
  • Egg
  • Sugar
  • Vanilla Extract
  • Sugar – for caramel syrup
  • Water – for caramel syrup

Step-by-step instructions on how to make Caramel Bread Pudding in the Instant Pot or Nutricook Smart Pot Eko

To make Caramel Syrup

  1. Take a saucepan and mix the sugar and water. Place it on low heat. Slowly the sugar will melt and the colour will change to amber. Do not swirl. If you think that the sugar isn’t cooking uniformly, give the saucepan a gentle swirl
  2. Once the sugar turns golden, turn off the heat. As it still bubbles, it will continue cooking and darkening. Pour it in your glass baking dish and swirl it around so it covers the entire base of it
  3. Keep it aside and let it cool down completely

To make the Pudding

  1. Take a Blender Jar and blend together the teared up bread slices, milk, egg, vanilla extract and sugar. Now, pour the entire content of the jar on the prepared baking dish with caramel at its base. Cover the dish with a foil paper nicely
  2. Plugin the Instant Pot or Nutricook Smart Pot (Affiliate Link) and switch it on. Pour 2 cups of water in it and place the Trivet inside.
  3. Place the baking dish on the trivet before placing the lid of the Smart Pot or Instant Pot back. Switch the pressure release valve to SEALING Mode
  4. Select the STEAM MODE and set the timer at 35 mins. Select the START button
  5. Once done the pudding should have set completely with the centre being slightly jiggly. Take it out of the Pot and let it stand on the counter for 10-15 minutes. By this time it would have cooled own a bit
  6. To unmould, loosen the edge with a knife and turn it upside down on a plate. Please note that the caramel would have melted so there will be liquid in the bottom of the baking dish
  7. Allow it to cool down to room temperature before putting it in the refrigerator for 1 hour. Serve chilled

Post-cooking care for an Instant Pot or Nutricook Smart Pot Eko

Once the cooking is done, here are few things that you can do to keep your Instant Pot clean and ready for your next cooking.

  1. Once the cooking is done, switch off the appliance. Clean it using a damp cloth. Do not use any abrasive material or you will end up scratching the body.
  2. Wash the lid thoroughly using a sponge and mild detergent. Allow it to dry first before placing it back on the pot. You can also put this in the dishwasher.
  3. Wash the stainless steel cooking pot using a sponge and mild soap and allow it to dry.
  4. Keep the Instant Pot body open for a couple of hours before assembling it to let it air a bit.
