This Katla Macher recipe of using the macher tel or fish fat is one of the unique dishes popular in my family. Here, the katla macher tel that is fish fat and its liver is fried in some mustard oil along with chopped onion and a handful of rice. This in itself is a dish and doesn’t need any side dish to go with.

In traditional Bengali cooking, macher tel or fish fat is a coveted ingredient. Often the freshest catch yields the best fish fat, which is then cooked in different ways.

Riverine fishes like rohu or rui and katla, which are most popularly consumed for everyday meals, has a decent amount of fish fat to make a macher tel recipe like this one.

The list of ingredients is simple and very easy to put together. Here, we will be frying some pre-cooked rice into fried fish fat. No particularly extra ingredients except for a couple of bay leaf, onion, garlic and some green chilies. So, let’s have a quick look at the things we would need for this recipe of Macher Tel Chorchori.

How to serve this Katla Macher Tel diye Bhat Chorchori

As I mentioned before, this is a standalone dish in itself, which doesn’t require any more side dish options. Usually, there isn’t enough of fish fat to cook an entire meal for the family, but it can be a part of the meal. So, a portion of the cooked rice can be made into this macher tel chorchori and served along with the rest of the dishes.

Usually, I plan a couple of katla macher recipes for that day. While my meal begins with this katla macher tel chorchori, I make some Doi Maach with the katla fish to be served with plain rice.

Ingredients
  • Fish Fat from 1 medium sized fish weighing somehwre around1.5 kilos
  • 1 Onion Large – Sliced
  • 5-6 Cloves of Garlic
  • 2 Green Chilies Chopped
  • 2 Bay Leaves
  • 2 cups Basmati Rice Cooked
  • 2 tbsp Mustard Oil
  • 3 Green Cardamom
  • ½ tsp Turmeric Powder
  • Salt to Taste
Instructions
  1. Heat oil in a pan and add mildly pounded Green Cardamom pods and bay leaves. Allow this to sizzle for coups of seconds.

  2. Then add the sliced Onion and chopped Garlic

  3. Once they turn light golden, add the fish fat. It will immediately begin to melt. Take a scissor and cut any larger pieces into smaller ones. Keep cooking this on medium-low heat till the onion turns brown and beautifully caramelized.

  4. Then add turmeric powder and chopped Green chilies. Give this a stir

  5. Add the cooked rice and mix everything together. Season with salt as per taste. Fry for next few minutes before turning the heat off.

  6. Serve.
