If you have fresh lemongrass in your veggie bin, then slice and chop them up for this recipe. But if you have dried stalks of lemongrass then simply cut the stalks in pieces, bang them with the back of the knife and drop them in your pot.

Not only it would make your chicken taste delicious, it will make your entire kitchen aromatic!

The best thing about the lemongrass recipes for chicken is that it needs some of the basic ingredients from your pantry. And you can play around with them in so many ways.

Honestly, I have made this lemongrass chicken in so many different ways that I can possibly remember. But this version has nailed all the flavours perfectly.

And this is a perfect non-fussy side dish which can be served with so many options. Personally, I love to serve it with Burnt Garlic Fried Rice. In fact, you can also serve it as a snack or finger food by boiling down the gravy.

How to make Lemongrass Chicken – Ingredients list

  • Chicken on-bone pieces
  • Lemongrass stalks
  • Ginger
  • Garlic
  • Onion
  • Green Chilies – adjust as per taste
  • Dark Soya Sauce
  • Cornflour
  • Red Chilli flakes
  • Garlic Powder
  • White Vinegar
  • White Sesame Seeds

How to use Lemongrass stalks here?

If you have lemongrass in your kitchen garden, then you can get some fresh stalks for this dish. Otherwise if you can get some fresh lemongrass stalks from your supermarket, then also you can use tender fresh stalks here. Simply remove the dry and rough outer cover and finely slice the inner soft stalks of the herb and add them to the oil. Let it infuse for couple of seconds before moving ahead with the recipe.

In case you have dried stalks, just how I used them here, remove the dried outer layer and then cut the inner stalk in 3 inches long pieces. Now, place them on your chopping board and hit them gently with the back of your knife couple of times to bruise them. Now drop them in the oil and let it infuse.

In fact those who are fussy about getting herbs in their bite, can keep the stalks long and remove it afterwards.

You can batter fry them first just like I did here with the chicken or simply drop them in the prepared gravy. Both ways, it is going to be super delicious!

Ingredients
  • 750 gms Chicken
  • 4 + 1 tbsp Cornflour
  • 1 tbsp Red Chili Flakes
  • 1 tbsp Garlic Powder Or, use grated Garlic as per taste
  • Salt to Taste
  • 2 x 2" Lemongrass Stalks
  • ¼ cup Refined Sunflower Oil
  • 10 Cloves of Garlic Finely Chopped
  • 2 inches Ginger Finely Chopped
  • 1 Onion Large – Cut in cubes
  • 1 tbsp Brown Sugar or Honey/Sugar/Jaggery
  • 2 tbsp Dark Soy Sauce
  • 1 tbsp Vinegar
  • 1 Green Chilli Sliced – As per taste
  • ½ cup Water
  • 1 tbsp White Sesame Seeds
Instructions
  1. Prepare the dry rub by mixing 4 tbsps of Cornflour, Garlic Powder, Red Chilli Flakes and Salt.

  2. Now, sprinkle this dry rub on the chicken pieces and coat them completely.

  3. Heat oil in a frying pan. Shallow fry the chicken pieces on medium heat till they turn golden. Keep them aside.

  4. Now in the same oil, add the lemongrass stalks. Bruise them with the back of your knife before dropping them in the oil.

    If you are using fresh Lemongrass, then you may finely slice them and add it here.

  5. Let it sizzle for a couple of seconds before adding finely chopped garlic, half of the grated ginger and onion pieces. Saute on low-medium heat till the onions turn translucent.

  6. Now, add the green chilli, brown sugar, vinegar, soy sauce and water. Make a slurry of the remaining cornflour and add it to the pan.

  7. As the gravy starts to thicken, drop the fried pieces of chicken. Mix everything well. Season with some salt at this stage.

  8. Once you get the desired consistency of the gravy, add the remaining grated ginger and sesame seeds. Turn off the heat and serve.
