Lime Cake with Strawberry Swirls Recipe

How to make this easy Lime Cake with Strawberry Swirls – Ingredients list

  • Limes (of course!) – It is always better to bake with fresh limes and its zest. The flavour profile of fresh ingredients is simply unmatched.
    However, as it wasn’t available with me at the time of the baking, I used some Knorr’s Lime Seasoning Powder
  • All-Purpose Flour
  • Corn Starch
  • Baking Powder
  • Baking Soda
  • Sugar
  • Sunflower Oil – alternate would be Extra Virgin Olive Oil
  • Eggs
  • Milk – alternate would be any vegan milk options, such as almond milk, soy milk, etc.
  • Strawberry Compote – alternate would be any good quality Strawberry Jam

Here, I have baked this cake in my 9×5 inch loaf pan. If you want you can bake it in any other cake pan of your choice. Just adjust the baking time accordingly.

For me baking cakes come naturally. I feel as if I can even bake a cake with my eyes closed! However, I realise that’s not the case with many of you. Some of you are first time bakers, some of you have baked earlier but were/nt much happy with the outcome!

I hear you, my friends. So, here’s a quick list of tips and tricks that can help you with your baking game.

How to bake like a pro at home?

  • Cut the Fear – Yes, you heard it right. Just start with a positive bent of mind and you will be alright. If you are scared already, there’s more probability that you will make some inadvertent mistake.
  • Understand the Basics of Baking – Baking a cake is a bit of both science and art. Each ingredient has to play the part perfectly to create a joyful symphony. For instance, take the time to whip up the eggs till they double in their volume, sieve the dry ingredients, do not over-mix the batter, etc. All of these are told a million times, and it is done so for a reason.
  • Understand your Oven – Every oven is different. The way mine works don’t mean yours will work the same. So, no recipe is fool-proof, per se. You have to understand the temperament of your oven. Some get a bit hotter than others, so if you leave your cake unattended at 180c for 45 minutes just because it said so in the recipe, you might get a burnt cake. Don’t blame the author or blogger for that!
    I have received this feedback so often saying that their cake didn’t bake well or was too dry at the end of the time mentioned. And I always say one thing, that “I have also mentioned that the cake will shrink, once it does, check if it’s done at the centre. Then adjust the time accordingly, if needed.” Perhaps that nobody reads!
  • Follow the recipe, but use your judgement as well. – Recipes are merely a guideline as to how to go about cooking a particular dish. Rest if you have been in and around the kitchen, you should know some of the basics of baking, or cooking for that matter.

Apart from these, before you get down to baking gather all the ingredients so that you don’t miss out on something. Use good quality products, the best you can afford. No need to go overboard, but keep decent products in your pantry. Fresh and high quality ingredients yield the best results!

Another important tip, do not use old & expired Baking Powder & Baking Soda for your cake recipes. They won’t work as expected and you will get a flat out dense cake.

How to Make a Strawberry Compote

What is a compote? When you boil the fruits with some sugar on a stove, you get a smooth fruit puree, also known as a fruit compote. You can make this compote with both fresh as well as frozen fruits.

Compote and jams are slightly different from each other. While compote has fruits boiled with some sugar, the jam has the fruit boiled in its own juices till it gets thickened.

To make a strawberry compote, take 1 cup of chopped Strawberries and boil it with 2 tsp of sugar in a saucepan. Keep stirring it constantly till everything melts. Allow it to simmer for a couple of minutes more to thicken.

Then take it off the heat and leave it to cool down completely. Sieve to make it smooth. Your Strawberry compote is ready.

In case you don’t have fresh strawberries at home, you can use Strawberry Jam or Mixed Fruit Jam instead. Just microwave it for couple of seconds till it softens and then use it to top the cake and make swirls.

Ingredients
To make Strawberry Compote
  • 1 cup Strawberries Chopped
  • 1 tsp Sugar
To make Lime Cake
  • cup All Purpose Flour
  • 3 tbsp Cornflour
  • 3 Eggs
  • ½ cup Oil
  • ½ cup Sugar
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Lime Powder Or, 2tbsp Lime Juice + Lime Zest
  • ½ + 2tbsp cup Milk
Instructions
To make Strawberry Compote
  1. take chopped Strawberries and boil it with sugar in a saucepan. Keep stirring it constantly till everything melts. Allow it to simmer for a couple minutes more to thicken

  2. Then take it off the heat and leave it to cool down completely. Sieve to make it smooth. Your Strawberry compote is ready.

To make Lime Cake
  1. Take a large bowl and whisk the eggsin it till they double up in volume.

  2. Add the sugar in parts to it and whisk.

  3. Once the sugar dissolves add the oil and whisk.

  4. Pre-heat the oven at 180c or 350F.

  5. Now mix all the dry ingredients together and sieve twice. Add it to the wet ingredients in 2 parts and mix gently. Loosen the batter with oil.

  6. Once everything incorporates nicely, pour the batter in your loaf pan. Now, spoon the Strawberry compote on the top of the cake and use a toothpick to swirl it around.

    In case you are using non-stick loaf pan, you can pour the batter directly. Otherwise, grease and dust the pan or line it with parchment paper.

  7. Bake the cake at 180c or 350F for 40 mins or so. When the cake starts to shrink from the edges, check if it's done by poking a toothpick in the centre. If it comes clean, then take out the pan from the oven, otherwise bake for a while longer. Keep checking if it's done at regular intervals.

  8. Allow the cake to cool in the loaf pan for 10 minutes before taking it out. Slice and serve
