- Carrots – grated
- Choice of Nuts & Dry Fruits – I prefer Walnuts & Raisins. An alternate would be Pecans, Hazelnuts, Almonds, Sultanas, Plums, Figs, Pineapple
- All-purpose Flour
- Brown Sugar
- Eggs
- Refined Neutral Oil
- Milk
- Baking Powder & Baking Soda
- Vanilla Extract
- Cream Cheese
- Butter
- Icing Sugar
- Lemon Juice
Step-by-step instructions on how to make a Carrot Loaf Cake with Walnuts & Raisins
- Whisk the eggs in a bowl with a pinch of salt and vanilla extract
- Add brown sugar and oil. Give this a good whisk till the sugar dissolves. To make this easier, you may grind the sugar a bit
- Now add nutmeg, grated carrot, chopped nuts & raisin to it. You can also add cinnamon here as per your preference.
- Place a sieve in the bowl and add flour, baking powder and baking soda. Fold it gently by adding the milk
- Pour it into the baking tin and give it a hard tap to bring out the air bubbles
- Bake it at 170C for 40 minutes till the skewer poked at the centre comes out clean
- Place it on a wire rack to cool it down completely before frosting it
- To make the cream cheese frosting, whisk together softened cream cheese, butter, icing sugar and lemon juice till you get soft peaks. It is important you let the cream cheese and butter soften up for the perfect consistency
- Slather the frosting on the cake loaf once it has cooled down completely. Top it with some chopped walnut
- Slice and serve
