One thing I love about this vegetable fried rice recipe is that you can easily double the ingredients and have enough as leftovers for a quick homemade lunch the next day. In this blog post, I have discussed the recipe for stir-fried rice with veg in detail so that you can easily whip it up in your kitchen

- Veg fried rice is one dish that can be a meal in itself. Add vegetables of your choice like pepper, beans, corn, onion, and garlic with some rice and there you have it. To further amp it up, you can add some protein ingredients like scrambled eggs or lightly tossed prawns, shredded chicken, bacon bits, or pork.
- There can be a million variations to this vegetable fried rice recipe. You can always play around with the seasonings in rice recipes like this to create different flavor profiles in your homemade fried rice
- It is perfect for those who are always in a hurry. It is a savior for me as a working mom of a toddler. It’s a one-pot dish which means less time to come up with a meal and even fewer dishes to clean, even if it’s just one extra pot to cook rice separately from veggies!
- Perfect as leftovers. I always prefer making a double batch of this. After it’s cooked, I remove half of it in glass lunch box containers. Once they have cooled down completely, I put on the lid and pop them into the refrigerator for the next day’s lunch bags.

- Vegetables like Pepper or Capsicum, French Beans, Carrots, Onion, Garlic, Spring Onion, etc – alternate would a bag of frozen mixed vegetables
- Whole Spices like Cinnamon, Cardamom, Star Anise, Cloves
- Neutral flavoured oil such as Refined Sunflower Oil, Canola Oil, Olive Oil
- Salt & Pepper
How to choose the best rice for fried rice?
For any type of fried rice recipe, it is always preferable to use a non-glutinous and less starchy variety of rice which will give you the perfectly stir-fried rice. Hence Basmati rice or Jasmine Rice is often favoured over short-grained glutinous sushi rice.
It is also debated whether to wash the rice before cooking. The answer is simple. YES! When you wash the rice, you are washing the starch particles sticking to the surface of the rice created as a result of polishing. So the more the rice is washed, the better your rice will turn out after cooking.
Which ones are the perfect mixed vegetables for a fried rice recipe?
Honestly, it depends on person to person. I find the combination of carrots, onion, pepper and garlic best of a stir-fried rice. It is a simple combination of vegetables that are usually available throughout the year.
However, I also like to add french beans, cauliflowers, spring onions, peas, sweet corn, baby corn, and garlic greens as and when they are available. You can also use bags of frozen vegetables for fried rice that come as a pre-mix of veggies cut in small sizes.
Veg Fried Rice recipe instructions
One of the best fried rice recipes calls for fluffy rice mixed with perfectly stir-fried veggies, all seasoned perfectly. And the way of achieving this is to keep certain tricks in mind.
While most fried rice recipes on the internet call for cooking the rice separately first and then adding it to the stir-fried veggies. However, here I have shared the one-pot vegetable fried rice recipe that anyone can make by using one single pot.
So, whether you are a college kid cooking this in your dorm or a busy housewife preparing a wholesome dinner for your family, you will not be disappointed. Just remember to follow these steps exactly and you will be sorted
- Start by washing the rice a couple of times till you get clear running water. Use a sieve to do this or a large colander, whichever you are comfortable handling
- If you using a bag of frozen chopped veggies then skip to the next point. Or, take out the veggies and wash them properly. Prep them by peeling them and dicing them in small pieces. Try to have them cut in uniform size
- The best pan for fried rice is a slightly thick bottom so that you can saute your veggies without burning them and cook the rice in it. Also, it should have a tight lid. So, choose one accordingly
- Heat some oil and drop the whole spices in it. The Cardamom might splutter so be careful. Gently roll them around in the oil on low heat so that they release the aromatics
- Now, drop the frozen veggies in the oil. If you are using fresh vegetables, then drop the ones that require a longer time to cook such as carrots, beans, cauliflower, corn, baby corn, etc.
- Allow them to cook for 5-7 minutes on low-medium heat before adding the rest of the veggies and giving them a toss
- Add a pinch of salt and pepper while cooking the veggies
- Now add the washed rice and give a gentle mix. Be very gentle to not cause the rice grains to break as they can be quite delicate after washing and soaking up some water while doing so
- Add the double amount of water to the amount of rice used here. So, if you have used 1 cup of rice then add 2 cups of water. Use the same measuring cup for accuracy here
- Give a gentle swirl to the pot. Season with some more salt as per taste and tightly put on the lid of the pan. Turn the heat to low and allow it to simmer for the next 15-20 minutes
- After that, take off the lid and check the level of water. If you can see liquid with the rice then put the lid back on to cook a bit more. However, if you cannot see any liquid but see bubbles erupting through the rice, then take a fork and give gentle fluffs. Turn everything around gently in the pan from the bottom to top. You can also use chopsticks here. Avoid rice paddles or spatula.
- Turn off the heat, put the lid back on, and allow it to rest for 5 more minutes.
- After that take out the fried rice and spread it on your platter and serve.
It should be a perfectly made veg fried recipe with well cooked rice and vegetables in it. For extra crunch you can add freshly chopped spring onion or garlic greens on top as garnish. If you are feeling fancy, you can also top it with lightly fried or toasted dried nuts and fruits like cashews, chopped almonds, walnuts, raisins or sultanas, pine nuts, etc.

- 1 cup Long grained Basmati Rice – washed & drained
- 1 Pepper or Capsicum Smal, diced
- 8-10 nos. French Beans Diced
- 2 nos. Carrots Diced
- 1 Onion Large, diced
- 10 Cloves of Garlic Finely chopped
- Spring Onion For garnish, finely chopped
- 1 inch Cinnamon
- 2 nos. Green Cardamom
- 1 Star Anise
- 4 Cloves
- 2 tbsp Neutral flavoured oil such as Refined Sunflower Oil. Canola Oil, Olive Oil
- Salt & Pepper As per taste
- 2 cups Water

Start by washing the rice a couple of times till you get a clear running water.
