Colloquially we all are guilty of calling soya products as ‘Nutrela’ although most of us know that ‘Nutrela’ is simply a brand name of soya products offered by Ruchi Industries. Owing to the popularity of the brand, the soya term has almost equivocally been replaced by the brand name. No wonder, as Nutrela has been ruling the Indian markets for some decades!

Ingredients
  • 1 cup Soya Granules
  • 1 Potatoes – Cut in Cubes
  • 2 Onions – medium – finely chopped
  • 2-3 Medium Tomatoes – pureed
  • 2 Green Chilies
  • 4-6 tbsp Mustard Oil
  • ½ tsp Cumin Seeds or Jeera
  • 1 Bay Leaf
  • Salt to Taste
  • 1 tsp Kashmiri Mirch Powder or Sweet Paprika
  • tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 tsp Bengali Garam Masala Powder You may use any other Garam Masala powder and adjust the quantity as per your needs
  • 1 tbsp Ginger Paste
  • 2 tbsp Garlic paste
Instructions
  1. Boil a saucepan of water. Turn off the heat and pour the soya granules in it. Let it soak for a couple of minutes or until it fluffs up and doubles in volume.

  2. Sieve the granules and discard the water. Wash the granules in cold water 2-3 times to remove the soya odour. use potable or drinking water for thus purpose.

    Keep it aside.

  3. Now, heat oil in a pan and add cumin seeds and bay leaf.

    Now add the chopped Onions, Tomato puree, ginger-garlic paste and fry the mix. Once it dries up in to half, add the powdered spices, chopped green chilies and cubed potato and fry till it dries up.

    As we have used oil conservatively, I do not expect the spice mix to release oil at the edges.

  4. Now, add the washed soya granules in the spice mix and pour ½ cup of water to mix the spices up.

  5. Put on the lid and let it simmer for a while. Once the potato cubes are cooked, check the water content. It should be dry, so if there is extra moisture, turn the heat a bit high and sir-fry it it dries up completely.

    Serve with a garnish of finely chopped fresh Coriander leaves.
