If you love chocolate, coffee, or both, then this Tiramisu Mug Cake is the perfect dessert recipe for you. Easy to put together because all you need is some good coffee, flavorful vanilla extract, and a bit of good-quality cocoa powder.
This “Tiramisu in a mug” is heavily inspired by the popular Italian dessert, however, I have simplified it for easy baking. I baked a simple Vanilla mug cake and then assembled it with some coffee liqueur and chilled whipped cream to turn it into a decadent dessert.
Ingredients for Tiramisu Mug Cake (Serves 2)
Baking purists kindly excuse me because this recipe for copycat Tiramisu Mug Cake is a total cheat! I have replaced practically everything that goes into the original & traditional Italian Tiramisu recipe, instead using easy-to-get, pantry staple ingredients that are accessible at all times.
For the Cake Base
- ¼ cup All Purpose Flour
- 1 tbsp Cornflour
- 1 Egg
- 2 tbsp Granulated Sugar
- 2 tbsp Refined Sunflower Oil
- ½ tsp Baking Powder
- ½ tsp Baking Soda
- 1 tsp Vanilla Extract
- 2-3 tbsp Milk
To make the Coffee Liqueur
- 1 tbsp Instant Coffee Powder – I find Davidoff, Lavazza & Nescafe Matinal good for this. However, the regular Nescafe Classic or Bru also serves equally well. You can use ground-roasted Filter Coffee as well.
- 3 tbsp Boiling Water
For Whipped Topping & Garnish
- 2 cup Heavy Whipping Cream
- 2 tbsp Yogurt – Hung & drained
- 2 tsp Granulated Sugar For Whipped Cream
- Dark Cocoa Powder to dust on top
Recipe instructions for instant (cheat) Tiramisu in a mug cake style
To bake the base Vanilla Cake
- Pre-heat the oven to 180°C
- Sieve the dry ingredients twice.
- In a separate bowl, whisk the egg till fluffy. Then add the granulated sugar and oil and whisk till the sugar has dissolved completely.
- Prepare the mugs for baking the cakes by brushing some oil.
- Now, add the dry ingredients to the wet ingredients in 2 parts along with the milk and vanilla extract. Do not use an electric beater for this. Rather use a balloon whisk or a fork.
- Once the batter is ready, divide it in the mugs and bake it for 15-17 minutes at 170°C
- Once you see the cake pulling from the side of the mug, you will know it is baked. Insert a toothpick in the center and it should come out clean.
- Take the mug cakes out of the oven and allow them to cool down completely.
Assembling the Tiramisu
- Whip the cold unsweetened Whipping Cream, chilled Yogurt, and granulated sugar till soft peaks. Refrigerate it till you use it. Omit the sugar if you have sweetened cream on hand
- Mix the Coffee Powder with hot water and prepare the coffee liqueur. Allow it to cool down.
- Poke some holes in the Vanilla Mug Cake. Now, drizzle the coffee liqueur on the cakes so that it gets absorbed. If there is extra coffee on the top, discard it.
- Now, top the mug cakes with the whipped cream and flatten the top with the back of a knife.
- Dust some cocoa powder before serving.
