What is a mug cake?
Well, as the name says it all, its a cake that has been baked in a mug. Here, I have used my tea cup set to bake this mug cake. So, is it like the normal cake? Absolutely, its just that the recipe has been quartered and subsequently the time for baking has been adjusted.
Another thing I love about a mug cake recipe is that it is totally bake and serve dish. I mean, you bake in a mug and then just grab a spoon and dig in. No need to take it out and prep it on a cake platter.
If you are feeling fancy then put a dollop of whipped cream on the cake and you are pretty much sorted with a gorgeous looking dessert (without even breaking any sweat).
So, bring out all those odd cups and mugs and bake some mug cakes. Who knew all those gifted mugs can be after all put to some good use!!

- 1 tbsp Cornflour
- 1 Egg
- 2 tbsp Granulated Sugar
- 2 tbsp Refined Sunflower Oil
- ½ tsp Baking Powder
- ½ tsp Baking Soda
- 1 tsp Vanilla Extract
- 2-3 tbsp Milk
- ¼ cup Heavy Whipping Cream
- 2 tsp Granulated Sugar For Whipped Cream
- Cadbury Gems for topping
Pre-heat the oven at 180°C
Sieve the dry ingredients twice.
In a separate bowl, whisk the egg till fluffy. Then add the granulated sugar and oil and whisk till the sugar has dissolved completely.
Prepare the mugs for baking the cakes by brushing some oil.
Now, add the dry ingredients mix into the wet ingredients in 2 parts along with the milk and vanilla extract. Do not use electric beater for this. Rather use a balloon whisk or a fork.
Once the batter is ready, divide it in the mugs and bake it for 15-17 minutes.
Once you see the cake pulling from the side of the mug, you will know it is baked. Insert a toothpick in the centre and it should come out clean.
Take the mug cakes out from the oven and allow them to cool down completely.
Once they have cooled down completely, prepare the whipped cream. Whisk the cream and sugar till soft peaks. Take spoonfulls of it and put it on the top of the cakes.
Note that the cakes should be completely cool before you pour the whipped the cream of the top, otherwise it would melt.
Add toppings of your choice on the top of the cream.
