Vegetable Lemon Rice

This Indian vegetable lemon rice is a tangy and refreshing seasoned fried rice dish that adds freshness to a meal. Long-grained basmati rice stir-fried with freshly squeezed lemon juice and a medley of flavors from fresh curry leaves, chana dal, and mustard seeds. I like to add some chopped vegetables to pack some more nutritional goodness.

On hot and sultry summer days, if I have some leftover rice in the fridge and some fresh lemons on hand, this simple lemon rice is always on my list. With whatever vegetables I have on hand that can be added to a fried rice, chop them up into small cubes for this veg lemon rice.

Ingredients for Lemon Rice recipe

  • 2 cups Cooked Basmati Rice
  • 1 cup Chopped Mix Vegetables (such as carrots, peas, french beans, capsicum)
  • 1/2 tsp Mustard Seeds
  • 1 tsp Chana Dal
  • 1/4 cup Lemon Juice
  • Salt to Taste
  • 1/2 tsp Turmeric Powder
  • A pinch of Hing or Asafoetida
  • A stalk of Curry Leaves
  • 1-2 Green Chilies (adjust as per taste)
  • 2 tbsp Neutral flavoured Oil
  • 1/4 cup Peanut (optional)

Recipe instructions

  • Heat oil in a pan. As it warms up, add the peanuts and fry them till they turn golden. Take them out and keep them aside.
  • In the same pan, add mustard seeds, hing, chana dal, and fresh curry leaves. As they sizzle, add the cup of finely diced vegetables. Allow them to sweat for 4-5 minutes on low-medium heat.
  • Now, add the cooked basmati rice, lemon juice, green chilies, and turmeric powder. Give it a very gentle mix so that all the flavors are assimilated well. Finish with a sprinkle of the fried peanuts, coarsely crushed, to add crunch to this dish.

Serving suggestion

I love pairing this simple lemon rice with seafood dishes or spicy egg curry. And when I am in a hurry, I feel this simple lemon rice goes well with spiced yogurt or raita. Now who won’t like to have this refreshingly good meal on a summer day!
