This Asian Chicken Dumpling Soup is a one-pot wonder, complete with a wholesome chicken broth, a time-saving approach, and the bonus of prepping ahead with freezer-friendly chicken potstickers. This is a perfectly healthy dinner recipe for those chilly evenings when all you want is to cozy up with a bowl of soup.
Grab a large heavy bottom pot and make some quick chicken broth. Heat some olive oil and lightly saute the finely sliced garlic, white heads of spring onion, and grated ginger.
Add some shredded chicken and pour enough water to fill the pot by halfway to prepare the broth. Let this come to a rolling boil. You can also use store bought chicken broth here instead of water.
½ cup Boiled Chicken, 4 cups Chicken Soup Broth
At this stage drop the chicken dumplings carefully into the prepared chicken broth so that they also get cooked simultaneously. Check for seasoning and add vinegar, salt and pepper as per taste.
8 nos. Chicken Dumplings or Chicken Potstickers, Salt & pepper, ½ tsp White Vinegar
Cover the pan with the lid and allow it to simmer for 8-10 minutes so that all the flavors are released into the broth and the dumplings get cooked thoroughly.
Before serving, garnish with chopped spring onion & finely chopped fresh coriander leaves for some extra crunch.
