This Atta Ladoo or Whole Wheat Flour Ladoo is one of the healthiest Indian mithai recipe, which can also be served as a snack. It has aata (whole wheat flour), boora (sugar crystals), nuts and a very moderate amount of ghee to bind everything together.
Take 2 tbsp of Ghee in a pan and fry the cashews till golden. Once they are ready, add the fox nuts or makhanas to it and roast till they get golden. Turn off the heat and add the melon seeds and stir it for a minute or so.
Now, put this into a food processor and grind it into a coarse mix. Keep it aside.
In a heavy bottom pan, dry roast the atta or whole wheat flour on low heat by stirring constantly. Continue till it turns golden brown in colour and gives out a nutty aroma.
Add the ghee in this and continue cooking till the ghee is absorbed completely and the flour becomes a bit darker.
Crush the cardamom and remove the peels. Add the powder and the nutmeg powder to the roasted atta. Give it a mix.
Add the crushed nuts in this, mix well and turn off the heat.
Take the mix out in a mixing bowl and allow this to cool down a bit.
When it is comfortable to touch, add the boora or granulated sugar. Give it a good mix and start making ladoos. You can divide the entire mix into 10 parts and start working on each.
Take one part in your palm and press it into a ball. continue doing so till you get a round shape.
In case you feel that the ladoos aren't getting a good bind, add a tablespoon of warm ghee into the mix and work with it.
Once all the ladoos are ready, keep it in an air-tight container. No need to refrigerate.
