Ingredients
1cupBoiled Chicken piecesShredded in threads
3/4cupMayonnaiseUse Yogurt if looking for low-calorie version. Use Cheese spread if looking for more options.
2tbspOlive Oil
1/2OnionFinely Chopped
2Green ChiliesFinely Chopped
1/4cupCoriander LeavesFinely Chopped
Salt to Taste
1tbspItalian Seasoning
8Slices of Sandwich Bread
4Lettuce leaves
Instructions
Mix chicken pieces with spices and chopped onion, chilies and coriander leaves.
Whisk the mayonnaise with olive oil and mix it to the chicken. Mix everything well. Season it with salt as per your taste.
Lightly toast the slices of bread. (I prefer untoasted, but then, its me!)
Spoon out a generous amount of chicken filling and level it on a slice of bread. Place a lettuce leaf on it. Press another slice on it and cut it in triangles.
