This grilled paneer recipe is an excellent party snack idea. Marinated cubes of paneer and veggies like capsicum, bell pepper, onion, and tomato are strung through a seekh or a long metal pin and then put inside the hot tandoor for grilling.
In a mixing bowl, combine Gram Flour or Besan, Yogurt, Spices, Powdered Spices, and Mustard Oil into a Paneer Tikka marination paste
1 tbsp Ginger & Garlic paste, ¼ tsp Cumin Powder, ½ tsp Coriander Powder, ½ tsp Turmeric Powder, ¼ tsp Garam Masala Powder, ½ tsp Dry Mango or Amchur Powder, ¼ tsp Carrom Seeds or Ajwain, ½ tsp Dry Fenugreek leaves or Kasoori Methi, 1 tbsp Gram Flour or Besan, 2 tbsp Yogurt, 1 tbsp Mustard Oil
Take a piece of Aluminium Foil paper and mould it into a bowl. Burn a piece of charcoal till you see red ambers burning through it. Place it on the aluminum foil and drizzle some ghee on it. As it smokes, cover the bowl with a lid to stop the smoke from escaping. This would infuse all the flavors into the paneer and veggie cubes
Drop the Paneer cubes and veggies in it and let it sit in this for at least 30 minutes
2 nos Capsicum & Bell Pepper, 2 nos Tomato, 1 no Onion
Meanwhile, soak the bamboo skewers in water to prevent them from burning up
Fire up your grill pan and strew the paneer and veggie cubes into the bamboo skewer. Now place these paneer tikkas on the pan and let them get a golden char
Serve it hot and crispy with a drizzle of lemon juice and rock salt
