In another mixing bowl, whisk the egg whites with a pinch of salt till you get soft peaks.
Combine the egg white gently with the yolk mix. Do it in parts so that you can retain the air bubbles inside.
Add the flour in parts and mix very gently.

Heat a non-stick skillet or griddle over medium heat. Pour 2 tablespoons of batter onto the skillet for each mini pancake or you can add more for bigger ones.
Cook until bubbles form on the surface of the pancakes and the edges start to look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.
