Ingredients
1kiloCarrots7-8 nos.
3tbspGhee or Clarified Butter
5tbspSugarFor moderate sweetness
4Kesar Pedasapprox. 125 gms
1/2cupChopped Dried fruitsCashew, Raisins, Almonds, Walnuts, Pistachios, etc.
Instructions
Wash, clean & peel the carrots
Grate the carrots, if you can. Or, use a chopper or food processor to finely chop the carrots.
Heat the ghee in the frying pan. Add the chopped carrots till they shrink & soften. In terms of ghee you can be as generous as you wish. I have used it in moderation.
Now, add the sugar. Mix it up and allow it to melt.Again, I have used the sugar in moderation as we prefer the halwa to be mildly sweet. You may add more, if you prefer it sweeter. Please note that the pedas will also add sweetness.
As the sugar melts and caramelizes, you will see the colour of the carrots change and darken. Crumble the pedas and add it to the carrots.
Mix everything. You will note that the pedas will melt and mix up nicely with the carrots. Add the chopped nuts at this stage. Check for sweetness and add more if necessary.
