Khaja is an Indian sweet recipe where strips of layered pastry are deep-fried and then coated with sugar syrup. It is mildly sweet and crunchy on the outside, and flaky in the inside. Also known as Chiroti, it is a very popular Indian sweet made for special occasions.

Ingredients
1cupSugar
1cupWater
1½cupAll Purpose Flour or Maida
½cupRefined Sunflower Oil
5tbspCold Water
A Pinch of Salt
Instructions
To make Sugar Syrup
Take sugar and water in a sauce pan and gently bring it to a boil. Keep stirring so that the sugar is dissolved completely. Once you see that there are no more sugar crystals left, switch off the heat.
1 cup Sugar, 1 cup Water
To make Khaja
Take a mixing bowl and mix the maida or all-purpose flour with salt and oil
1½ cup All Purpose Flour or Maida, ½ cup Refined Sunflower Oil, A Pinch of Salt
Knead this into a dough using the ice cold water.
5 tbsp Cold Water
Leave it aside for couple of minutes.
Take this dough on a lightly floured surface and roll it thin. Trim the sides to make the sides straight
Brush some ghee on the rolled dough and dust some flour on it. Now, fold it into a thin log
Divide the rolled dough into equal thin strips of an inch width. Roll each of these strips into 3 inches long strips
Fry each of them on low heat till they turn golden and crisp. Once done take them out and dip and coat in sugar syrup. Take them out and keep it on a wire rack to air dry them.
