Ingredients
2Sweet mini bread loaves - an alternate would be any other sweet milk bread with slightly thicker slices
4Eggs
½Onion
2Green Chilies
Salt & Pepper
2tbspOil
Instructions
Crack 2 eggs in a bowl and whisk it to loosen it. Add some salt, finely chopped onion, green chili and some freshly cracked pepper. Use as much chili as you want, or as little.
Heat a skillet with some oil in it. You can use sunflower oil, canola oil, extra virgin olive oil or even ghee.
Pour the egg mix in it and roll it around to help it spread.
Now quickly slice the mini loaf lengthwise and place it in the egg just to moisten it. Quickly pick it up and turn it upside down and place it again on the egg mix. Cover the skillet and let the egg cook on low heat so that top gets cooked as well.
Now turn the bread along with the omelette over so that the moistened side gets fried as well. Fold the egg on the top and once it is fried, serve.
