This Lemongrass Chicken recipe ticks all the boxes for me, its simple, needs minimal ingredients and tastes absolutely delicious. 1tbspGarlic PowderOr, use grated Garlic as per taste
Salt to Taste
2 x 2"Lemongrass Stalks
¼cupRefined Sunflower Oil
10Cloves of GarlicFinely Chopped
2inchesGingerFinely Chopped
1OnionLarge - Cut in cubes
1tbspBrown Sugaror Honey/Sugar/Jaggery
2tbspDark Soy Sauce
1tbspVinegar
1Green ChilliSliced - As per taste
½cupWater
1tbspWhite Sesame Seeds
Instructions
Prepare the dry rub by mixing 4 tbsps of Cornflour, Garlic Powder, Red Chilli Flakes and Salt.
Now, sprinkle this dry rub on the chicken pieces and coat them completely.
Heat oil in a frying pan. Shallow fry the chicken pieces on medium heat till they turn golden. Keep them aside.
Now in the same oil, add the lemongrass stalks. Bruise them with the back of your knife before dropping them in the oil. If you are using fresh Lemongrass, then you may finely slice them and add it here.
Let it sizzle for a couple of seconds before adding finely chopped garlic, half of the grated ginger and onion pieces. Saute on low-medium heat till the onions turn translucent.
Now, add the green chilli, brown sugar, vinegar, soy sauce and water. Make a slurry of the remaining cornflour and add it to the pan.
As the gravy starts to thicken, drop the fried pieces of chicken. Mix everything well. Season with some salt at this stage.
Once you get the desired consistency of the gravy, add the remaining grated ginger and sesame seeds. Turn off the heat and serve.
