2tbspGhee alternate would be any neutral flavoured oil

Instructions
Mash the boiled potatoes or finely grate them. You can also use the Potato Ricer to ease this process
2 Potatoes
In a large mixing bowl, mix the flours in equal proportion. For instance, one cup of whole wheat flour with one cup of all purpose flour. Here, you can adjust the quantity of all purpose flour as per your preference. You can reduce it to make the parathas healthier.
1 cup Whole Wheat Flour, 1 cup All Purpose Flour
Add the mashed or grated potato to the flour along with finely chopped onion, ginger, garlic and finely chopped coriander leaves.
1 Onion, 1 inch Ginger, 6 Garlic, 2 tbsp Fresh Coriander Leaves, 2 Green Chilies
Add one beaten egg to the mix along with the seasonings and a slight drizzle of oil or ghee. Mix everything well together till you find a dryish lumpy mix.
1 Egg , 2 tbsp Ghee , Salt & Pepper
Sprinkle some water to the lumpy mix and bring it together into a soft dough. Cover the dough with moist cloth and allow it to rest for 10 minutes.
Pinch off a lemon sized dough ball and roll it thin on a flour sprinkled surface. Plop it on a hot tawa or griddle and cook it on both sides. Apply some ghee (or oil, if you prefer) and fry it till you get the parathas crispy
Serve it hot with mango pickle or any other achaar of your choice
