Instructions
Start by washing the rice a couple of times till you get a clear running water.
Prep the veggies by peeling and chopping them up.You cna also use a bag of frozen veggies available at supermarkets in the frozen section
Heat some oil and drop the whole spices in it.
1 inch Cinnamon, 2 nos. Green Cardamom, 1 Star Anise, 2 tbsp Neutral flavoured oil , 4 Cloves
Now, drop the frozen veggies in the oil. If you are using fresh vegetables, then drop the ones which require longer time to cook such as carrots, beans, cauliflower, corn, baby corn, etc. Allow them to cook for 5-7 minutes on low-medium heat before adding rest of the veggies and give them a toss. Add a pinch of salt and pepper while cooking the veggies
1 Pepper or Capsicum, 8-10 nos. French Beans, 2 nos. Carrots, 1 Onion, 10 Cloves of Garlic, Salt & Pepper
Now add the washed rice and give a gentle mix. Now add water and give a gentle swirl to the pot. Season with some more salt as per taste and tightly put on the lid to the pan. Turn the heat to low and allow it to simmer for next 15-20 minutes
1 cup Long grained Basmati Rice - washed & drained, 2 cups Water
After so, take off the lid and check the level of water. If you can see liquid with the rice then put the lid back on to cook a bit more. However if you cannot see any liquid but see bubbles errupting through the rice, then take a fork and give gentle fluffs.
Turn off the heat, put the lid back on and allow it to rest for 5 more minutes. After that take out the fried rice and spread it on your platter and serve with garnish of your choice.
