This Katla Macher recipe of using the macher tel or fish fat is one of the unique dishes popular in my family. Here, the macher tel that is fish fat and its liver is fried in some mustard oil along with chopped onion and a handful of rice. This in itself is a dish and doesn't need any side dish to go with.
Heat oil in a pan and add mildly pounded Green Cardamom pods and bay leaves. Allow this to sizzle for coups of seconds.
Then add the sliced Onion and chopped Garlic
Once they turn light golden, add the fish fat. It will immediately begin to melt. Take a scissor and cut any larger pieces into smaller ones. Keep cooking this on medium-low heat till the onion turns brown and beautifully caramelized.
Then add turmeric powder and chopped Green chilies. Give this a stir
Add the cooked rice and mix everything together. Season with salt as per taste. Fry for next few minutes before turning the heat off.
