Instructions
Remove the stalks of the dried red chillies. De-seed them if necessary. Soak them in warm water for 15-20 minutes
Meanwhile finely chop the ginger, garlic and onion.
Heat the oil in a frying pan on a gentle heat. Add the chopped ginger, garlic and onion, and saute for a couple of minutes till they soften and turn translucent
Coarsely blend the soaked red chillies with tomatoes and add it to the fried mix.
Add rest of the ingredients and allow this to simmer till you see oil floating on top.
Turn off the heat and allow this to cool down completely before storing in clear glass jar or jars.
