An iconic snack recipe from Maharashtrian cuisine, this Sabudana vada recipe is perfect to go with your evening cup of tea. Simple ingredients like sabudana or tapioca pearls, potatoes and a handful of Indian spices combine together to give this delicious vegan, gluten-free and totally plant-based dish.
½cupSabudana/Sago Pearls/Tapioca PearlsSoaked overnight, water drained
1cupPotatoespre-boiled, water drained
½inchGinger
2Green Chilies
¼cupFresh Coriander Leaves
Salt to taste
¼tspCumin Seeds
Refined Oil to shallow fry
Instructions
Finely chop the Green Chilies and fresh Coriander leaves.
Mash the potatoes and sabudana pearls together. Mix rest of the ingredients and mash up well.
Divide the entire mix into 6 equal parts and roll & pat them into cutlets.
Heat Refined Oil in a pan, enough to shallow fry the vadas or cutlets.
Fry the vadas till they turn golden and crisp. Drain them out on a paper towel or napkin to soak the extra oil. Serve with pudina chutney, ketchup or mustard sauce
