1cupAll-purpose Flour
1/3cupSugarGranulated
2-3Apples
⅓cupRefined Sunflower Oil
¼cupRum soaked Fruits and Nuts
2Eggs
½tspBaking Powder
¼tspBaking Soda

Instructions
Slice the Apples as thin as possible. Keep them aside wrapped in clingfilm wrap to avoid then turning black
In a mixing bowl, sieve and mix the dry ingredients together.
In another mixing bowl, whisk the eggs with a pinch of salt till they tun fluffy and light.
Add the sugar to the eggs and whisk it till it dissolves completely. Add the oil and whisk. By this time the entire volume should have increased almost 3 times.
Now, add the dry mix in two parts to the wet mix. In case you have the soaking liquid with the nuts & fruits, use that to loosen the batter.Otherwise add the milk.
Once the batter has come together, pour it in the loaf tin. Tap to even the top.
Now, take the sliced Apples and arrange them on the batter. Be creative as you would like.
Bake the loaf in pre-heated oven at 170C for 35 minutes or so. Be careful from 30 minutes onward. Every oven is different, so time may vary.
Once the cake is done, a skewer or knife inserted at the centre comes clean with no batter sticking to it, take it out and sprinkle brown Sugar on top or brush some honey for a shiny top. Allow the cake to cool in the loaf tin for 10-15 minutes.
After that take it out of the loaf tin and allow it to cool down completely on a wire rack. Slice & Serve.
