Super Moist Carrot Cake Loaf with Cream Cheese Frosting Recipe
This moist carrot cake loaf studded with walnuts & raisins with cream cheese frosting is downright one of my favourite loaf cake recipes that are easy to bake. It is packed with healthy ingredients like carrots, walnuts and raisins, and with the delicious tangy cream cheese frosting, it can be a gorgeous treat to welcome guests.
1cupChoice of Nuts & Dry Fruits I prefer Walnuts & Raisins. An alternate would be Pecans, Hazelnuts, Almonds, Sultanas, Plums, Figs, Pineapple
1½cupsAll-purpose Flour
½cupBrown Sugar
3Eggs
½cupRefined Neutral Oil
¾cupMilk
½tspBaking Powder & Baking Soda
1tspVanilla Extract
½cupCream Cheese
¼cupButter
1cupIcing Sugar
2tbspLemon Juice
Instructions
Whisk the eggs in a bowl with a pinch of salt and vanilla extract
Add brown sugar and oil. Give this a good whisk till the sugar dissolves. To make this easier, you may grind the sugar a bit
Now add nutmeg, grated carrot, chopped nuts & raisin to it. You can also add cinnamon here as per your preference.
Place a sieve in the bowl and add flour, baking powder and baking soda. Fold it gently by adding the milk
Pour it into the baking tin and give it a hard tap to bring out the air bubbles
Bake it at 170C for 40 minutes till the skewer poked at the centre comes out clean
Place it on a wire rack to cool it down completely before frosting it
To make the cream cheese frosting, whisk together softened cream cheese, butter, icing sugar and lemon juice till you get soft peaks. It is important you let the cream cheese and butter soften up for the perfect consistency
Slather the frosting on the cake loaf once it has cooled down completely. Top it with some chopped walnut
