This Indian vegetable lemon rice is a tangy and refreshing seasoned fried rice dish that adds freshness to a meal. Long-grained basmati rice stir-fried with freshly squeezed lemon juice and a medley of flavors from fresh curry leaves, chana dal, and mustard seeds. I like to add some chopped vegetables to pack some more nutritional goodness.

Ingredients
2cupsCooked Basmati Rice
1cupChopped Mix Vegetablessuch as carrots, peas, french beans, capsicum
1/2tspMustard Seeds
1tspChana Dal
1/4cupLemon Juice
Salt to Taste
1/2tspTurmeric Powder
A pinch of Hing or Asafoetida
A stalk of Curry Leaves
1-2Green Chiliesadjust as per taste
2tbspNeutral flavoured Oil
1/4cupPeanutoptional
Instructions
Heat oil in a pan. As it warms up, add the peanuts and fry them till they turn golden. Take them out and keep them aside.
2 tbsp Neutral flavoured Oil, 1/4 cup Peanut
In the same pan, add mustard seeds, hing, chana dal, and fresh curry leaves. As they sizzle, add the cup of finely diced vegetables. Allow them to sweat for 4-5 minutes on low-medium heat.
1/2 tsp Mustard Seeds, 1 tsp Chana Dal, A pinch of Hing or Asafoetida, A stalk of Curry Leaves, 1 cup Chopped Mix Vegetables
Now, add the cooked basmati rice, lemon juice, green chilies, salt and turmeric powder. Give it a very gentle mix so that all the flavors are assimilated well. Finish with a sprinkle of the fried peanuts, coarsely crushed, to add crunch to this dish.
