Everybody should have few recipes in their kitty which are totally hassle-free and quick. This Mishti Pulao recipe is for those days when you don't have time or any energy left for cooking and you have already crossed your quota for take-outs in a week.

Ingredients
1cupBasmati Rice
1/3cupDry FruitsCashew, Walnuts, Raisins, Pistachios, etc.
2cupWater
2tbspGhee or Clarified Butter
2tbspSugar
Salt to Taste
1/2tspBengali Garam Masala Powder
2Green Chilies
Chopped Coriander Leaves for garnish
Instructions
Wash and drain the rice.
Heat the ghee in a pan and add the dry fruits in it. Stir and fry them till the raisins puff up and the cashews turn golden.
Once done, add the rice and stir well for next 2-3 minutes of medium flame.
As the grains become dry, it will become aromatic with frying in the ghee.
Now, add the water and rest of the ingredients like Salt, Sugar, Bengali Garam Masala powder and Chilies. Give it a stir and allow it to simmer with lid on.
Once the water has been completely absorbed, take off the lid and using a pair of chopstick, give it a stir from the bottom to loosen the grains of the rice. Add chopped Coriander leaves before serving.
In case you find some water left at the bottom, then turn off the heat and cover the pan. It will absorb the excess water. Or, take the content out in a microwave safe bowl and microwave it on High for 2 minutes.
