This is a pretty straightforward recipe for Bread Pudding, which is a slight deviation from the classic Crème Caramel. While the latter is more about cream and eggs, here we are using slices of bread soaked in whole milk and eggs to give a body to this dessert.
The recipe is pretty simple, put everything together in a blender and give it a whizz and pop it in your microwave oven for exact 5 minutes. Once the time’s up, you will get a slightly-jiggly at the center but absolutely rice & delicious pudding.
While this is a basic recipe for bread pudding flavoured with vanilla extract, you can go ahead and play around with different flavours. You can add different ingredients while blending the mix for the pudding to make flavoured puddings, like

The pudding is luxuriously rich and aromatic with vanilla flavour, topped with homemade caramel syrup.
- 500 ml Milk
- 2 Bread Slices
- 2 Eggs
- 4 tbsp Sugar
- ¼ cup Sugar
- 1 tbsp Water
Take a saucepan and mix the sugar and water. Place it on low heat. Slowly the sugar will melt and the colour will change to amber. Do not swirl.
If you think that the sugar isn't cooking uniformly, give the saucepan a gentle swirl.
Once the sugar turns golden, turn off the heat. As it still bubbles, it will continue cooking and darkening. Pour it in your glass baking dish and swirl it around so it covers the entire base of it.
Keep it aside and let it cool down completely.
Place another saucepan with the milk on it and allow it to simmer for a couple of minutes before removing it from heat.
Tear the slices of bread roughly and drop them in the milk. Also, add the sugar and vanilla extract. Cover it and allow it to soak for 20-30 minutes on your kitchen counter. During this time, the bread would soften and the milk will cool down as well.
Once the milk has cooled down enough for you to dip your finger in it, pour the entire content of the saucepan in a blender jar. Also, crack 2 whole eggs in it. Now blend it into a smooth mix.
Pour the entire content of the jar on the prepared baking dish with caramel at its base.
Cover the dish with clingfilm and cook it in Microwave Oven at full-power (approx 900W) for 5 minutes or till the pudding has set completely.
Take it out. Loosen the edges with a knife and turn it upside down on a plate. Please note that the caramel would have melted so there will be liquid in the bottom of the baking dish.
Allow it to cool down to room temperature before putting it in the refrigerator for 1 hour. Serve chilled.
