This whole wheat cake recipe is for those who love cakes but get worried about those extra calories. This easy cake recipe is 50% whole wheat flour cake recipe with no butter and minimum sugar. On top of everything, it is loaded with dried fruits & nuts which makes it a healthy snack recipe.

This cake is pretty simple and quite forgiving, I would say. I already have a Fruit & Nuts Cake recipe up on my blog and it is just a variation to that. Honestly, at one point, I didn’t even consider writing a separate post on this. However, upon seeing so many requests on Facebook, I was inclined to make this a standalone post of a recipe for a whole wheat cake.

You can make a million variations to this whole wheat cake. For starters, this one 50% Whole Wheat Flour (WWF) and 50% All-Purpose Flour (APF). But you can go as much as 100% WWF. The only difference is that the cake would be slightly denser and have a nuttier taste of toasted flour. You may also find the colour of the crumbs inside a bit darker as compared to that of 100% APF Cake.

Another variation would be a whole wheat eggless cake, an immensely popular cake recipe among vegetarians, vegans and super diet watchers! Here, instead of APF, WWF is used. Eggs are also replaced with applesauce, mashed bananas or a simple combination of baking powder & baking soda.

How to make Fruit & Nuts Whole Wheat Cake – Ingredients list

  • Whole Wheat Flour or Aata – As the name suggests, we aren’t making a 100% APF or Maida cake. I have 50% of it with Aata.
  • All-Purpose Flour or Maida – Here in this recipe, I am using 1/2 cup of Maida along with Aata
  • Sugar
  • Eggs
  • Sunflower Oil – You may use any neutral flavoured refined oil here. For instance, rice bran oil, canola oil, etc. Of course, you can use Butter if you wish to have a rich cake.
  • Baking Powder & Baking Soda
  • Vanilla Extract – I use premium quality Vanilla extract from SPRIG (not sponsored). It is concentrated with flavour, and one bottle will last you for more than a year, even if you bake as regularly as I do.
  • Milk – If you are looking for vegan substitutes, you may use plant-based milk like almond milk, cashew milk, etc.
  • Fruits & Nuts – Now, this is a Fruit & Nut cake recipe so I think it is quite obvious that we will be adding these in this cake. I have used walnuts, cashew, almonds & raisins here. Other options would be pistachios, hazelnuts, dried figs, sultanas, cranberries, etc.

Ingredients
  • 1/2 cup Whole Wheat Flour
  • 1/2 cup All Purpose Flour
  • 1/2 cup Sugar
  • 2 Eggs
  • 1/3 cup Sunflower oil
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/3 cup Milk
  • 1/2 cup chopped dried fruits & nuts Walnuts, Cashew, Almonds, Raisins
Instructions
  1. Mix the dry ingredients and sieve them at least once in order to get rid of any lumps
  2. In a separate bowl, preferably of a bigger size, whisk the eggs till loose and fluffy.
  3. Add Sugar to the eggs and beat till the sugar has dissolved completely.
  4. Now add oil and whisk for a couple of seconds.
  5. Meanwhile, pre-heat your oven at 180°C. Prepare the non-stick cake tin by greasing and then dusting with flour.
  6. Add 1/3rd of the dry ingredients to the eggs mix and add half of the milk. Whisk it at low speed till everything is just mixed.
  7. Now, add rest of the dry ingredients, chopped nuts and milk. Take a silicon spatula and mix it gently till everything is just incorporated.
  8. Pour the batter in the cake tin. Top it with chopped walnuts.
  9. Bake it for around 30-35 minutes. Once done, you will see that the cake has shrunk a bit from the edges and the skewer put right in the centre comes out clean.
