Egg noodles stir fry recipe ingredients
- Chow balls or Noodles – both fresh and dried work perfectly here
- Eggs
- Onion, Ginger & Garlic
- Spring Onions
- Green Chilies
- Capsicum
- Vinegar
Step-by-step instructions on how to make egg chowmein
- Boil your chow balls or noodles as per the packet instructions. Keep them done till 75%. Remove 1/2 cup of the noodle water and discard the rest of it
- Drizzle some oil on the noodles so that they don’t stick together while cooling down
- In a wok, heat some oil and drop some whisked eggs into it. Stir them to make some scrambled eggs. Once done, take them out and keep them aside
- In the same wok, heat some more oil and saute the veggies. Reserve some chopped spring onion for garnish
- After tossing them for a couple of minutes, add the sauces and the reserved noodle water. Give everything a good mix
- Now, drop the boiled noodles and give everything a good mix. Use tongs for better grip and mix
- Add the scrambled eggs and mix
- Serve with a garnish of spring onions
Serving suggestions
This noodle stir-fry dish is pretty much good on its own. You can perhaps season it with some Chili Vinegar, otherwise, you are pretty much ready to cozy up with a bowl of this super delicious egg noodle

- 4 nos. Eggs
- 2 Onion Medium, Sliced
- 2 tbsp Ginger Grated
- 8 nos Garlic Finely chopped
- ¼ cup Spring Onions
- 2 Green Chilies
- 1 Capsicum Diced
- 4 tbsp Vinegar
