Prepare the Chicken Potstickers

Homemade Chicken Dumplings are the best if you ask me. I know what goes in there exactly and I can always make a big batch and freeze them for later. Here is the recipe for homemade Chicken Potstickers. However, no judgment if you are planning to use store-bought dumplings.

Make the Base Chicken Soup or Homemade Chicken Broth

For this Chicken Dumpling Soup, I have used my Clear Chicken Soup recipe for the broth. It is a light chicken broth that has the rich flavors of ginger, garlic, and a splash of vinegar. You can follow the detailed recipe by clicking the link above.

  • You can also grab a large heavy bottom pot and make some quick chicken broth. Heat some olive oil and lightly saute the finely sliced garlic, white heads of spring onion, and grated ginger. Add some shredded chicken and pour enough water to fill the pot by halfway to prepare the broth. Let this come to a rolling boil.
  • At this stage drop the chicken dumplings carefully into the prepared chicken broth so that they also get cooked simultaneously. Check for seasoning and add salt and pepper as per taste.
  • Cover the pan with the lid and allow it to simmer for 8-10 minutes so that all the flavors are released into the broth and the dumplings get cooked thoroughly.
  • Before serving, garnish with chopped spring onion for some extra crunch.

Serving Suggestions

I like to serve this Chicken dumpling soup with Asian ingredients as toppings like finely chopped spring onion, fresh coriander leaves, etc. If I feel like having something spicy then my homemade chili oil also goes very well with this light chicken soup.

If you want to bulk this Chicken Dumpling Broth then you can add a handful of boiled noodles as well for an extra dose of crabs.

To add more fiber to this soup, you can add your choice of veggies while preparing the broth. My personal favorites are carrots, spinach, and bok choy.

Interesting Variations

  • For Vegan Dumpling Soup, you can use Vegetable Dumplings in mixed vegetable broth.
  • For a more flavourful Dumpling Soup, you can use Pork Dumplings in Chicken Broth. In this way, the pork fat gets released into the broth, making it more rich and flavourful.
  • Add boiled noodles to the simmering broth to make Chicken Dumpling Noodle Soup.
  • You can also add some veggies like Carrots, Bok Choy, Spinach, Mushrooms, etc. to make Chicken Vegetable Dumpling Soup.
  • If you like thick and creamy chicken soup with dumplings, then you can add some flour to the pan before adding stock, cream, and cheese to the soup base to make it more hearty and wholesome.
