Since winter is just around the corner, its time to get our hearty and easy soup recipes sorted! This mix vegetable soup recipe is a perfect way to cozy up with a big bowl of little bit of spice and everything nice. This is my version of pressure cooker mix veg soup that uses bits and pieces of leftover veggies to give you one wholesome dish.

Most Preferred Ingredients For Mix Veg Soup Recipes

Usually every recipe for mix veg soup calls for veggies which can be used up in the making of the vegetable broth. Similarly, this recipe of mix veg soup uses the likes of Tomato, Spinach, Broccoli and Carrots which are very common. In addition to these, I also added Green Papaya as it is very nutritious and extremely good for liver. 

Apart from these you can always add some of the following vegetables to your mix vegetable soup:

  1. Onions
  2. French Beans
  3. Peas
  4. Cabbage
  5. Leeks
  6. Spring Onion
  7. Corn
  8. Potatoes
  9. Bottle Gourd
  10. Pumpkin

For flavoring the soup, I added chopped Garlic which again is a superfood and Coriander leaves. If you want it to be more flavorful, you may slightly saute your garlic in some Olive Oil and then add to the soup. 

Mix Veg Soup Recipe for Babies

In addition to all this, I also added a handful of Masoor Dal or red lentil to the soup recipe so as to add some protein to the dish. This mix veg soup is perfect for babies, especially if they are take solids. It has no oil and bare minimum spices. 

This recipe for mix veg red lentil soup is also beneficial to the nursing mothers who need additional nourishment while they are breastfeeding.

How to Serve the Mix-Veg Soup?

If you like your mix vegetable soup chunky, then you may serve it straight from the pot, in this case, pressure cooker. Otherwise, if you are like me then you may give it a whizz in a blender and sieve it for a smooth soup. However, sieving eliminates the fibrous components which i would not advise you with. 

So, if you are trying to up your intake of fibrous food or making your infant practice chewing, then I would suggest you to leave it be. Enjoy the odd bits & pieces of the veggies in your mix vegetable soup. 

I like to serve my hearty bowl of vegetable soup with a knob of butter, with a side of toasted slices of bread with cheese on it. I would say if you go by this, then you have an easy weekday dinner option with you.

Ingredients
  • 4 Tomatoes Large, Cut in cubes
  • 2 Carrots Around 1 cup, cut in cubes
  • 1 cup Spinach Leaves Roughly Chopped
  • 1 cup Green Papaya Cut in cubes
  • 3-4 Cloves of Garlic Sliced
  • 6-7 Broccoli Florets Halved
  • Salt to Taste
  • 4 cups Water
  • A dash of crushed Peppercorns
  • 2 tbsp Red Lentils or Masoor Dal Washed
Instructions
  1. Put all the ingredients in a pressure cooker, and let it whistle for 3-4 times.

  2. Allow the pressure cooker to cool on its own before opening.

  3. Crush some of the veggies with the back of your ladle and allow it to simmer to thicken a bit.

  4. When the consistency of the soup is right for you, turn the heat off. Serve it with some butter or cheese shavings.
