  • Raw Mangoes or Green Mangoes
  • Green Chilies
  • Garlic
  • Mustard Oil
  • Panchforon
  • Hing or Asafoetida
  • Black Salt & Salt
  • Powdered Spices like Turmeric Powder, Red Chilli Powder
  • Vinegar

Ingredients
  • 4 nos. Raw Mangoes or Green Mangoes
  • 100 gms Green Chilies
  • 3 Heads of Garlic
  • ¼ cup Mustard Oil
  • 3 tbsp Panchforon
  • 1 tsp Hing or Asafoetida
  • 3 tsp Black Salt
  • 1 tsp Salt
  • ½+½ Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 2 tsp Vinegar
Instructions
  1. Peel the green mangoes and chop them in small cubes. Similarly cut the green chilies and garlic in small pieces and mix everything together

  2. Now add some salt and turmeric powder to the mix and toss everything well. Keep this in a sieve placed on a bigger bowl so that the water released from the mangoes gets collected below.

  3. Keep it like this for a day. Give it a shake every now and then.

  4. Now, heat the oil in a pan and add panchforon, hing and the mango mix. Mix everything well.

  5. Add turmeric powder, red chilli powder and allow it to boil till oil separates on top

  6. Add the vinegar and allow it to simmer for couple more minutes before turning off the heat. Allow this cool down completely before transferring into glass bottles
